Description

This Baked Crunchy Hot Honey Chicken recipe offers a deliciously spicy and sweet twist on classic crispy chicken. Coated in a crunchy parmesan and cornflake crust and baked to perfection, the chicken is then drizzled with a warm, flavorful hot honey sauce with smoky and spicy notes, creating an irresistible combination that's perfect for an easy weeknight dinner or casual gathering.

Ingredients

Coating

  • 6 cups cornflakes (use gluten free, if needed)
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • sea salt, a pinch

Chicken

  • 2 large eggs, beaten
  • 2 tablespoons hot sauce
  • 2 pounds chicken breast tenderloins
  • extra virgin olive oil, for drizzling

Hot Honey Sauce

  • 1/2 cup honey
  • 2-3 tablespoons hot sauce
  • 1-3 teaspoons cayenne pepper
  • 3/4 teaspoon chipotle chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • sea salt, a pinch

For Serving

  • fresh thyme, cilantro, or parsley

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Make the Coating Mixture: In a food processor, pulse together the cornflakes, grated parmesan, smoked paprika, onion powder, garlic powder, and a pinch of sea salt until you achieve fine crumbs. If you don't have a food processor, place the cornflakes in a ziplock bag and crush them by stepping on the bag. Transfer the crumbs into a shallow bowl.
  3. Coat the Chicken: In a separate bowl, beat the eggs and add 2 tablespoons of hot sauce. Toss the chicken breast tenderloins in the egg mixture to coat them well. Then dredge each piece through the cornflake crumb mixture, fully covering them. For an extra-thick coating, dip the chicken back into the egg wash and again into the crumbs. Place the coated chicken pieces on the prepared baking sheet and drizzle them lightly with extra virgin olive oil.
  4. Bake the Chicken: Bake the chicken in the preheated oven for 20-25 minutes until they are crisp and golden all around and cooked through.
  5. Prepare the Hot Honey Sauce: While the chicken is finishing, warm the honey, hot sauce, cayenne pepper, chipotle chili powder, garlic powder, onion powder, and a pinch of sea salt in a sauce pot over medium-low heat. Stir until combined and heated through, adjusting spice levels according to your taste.
  6. Serve: Drizzle the warm hot honey sauce generously over the baked chicken. Garnish with fresh thyme, cilantro, or parsley for a fresh herbal note. If the sauce thickens too much, warm it briefly in the microwave before drizzling. Enjoy your spicy, crunchy hot honey chicken!
