Description

Delicious and nutritious baked oatmeal cups made with creamy peanut butter, rolled oats, chia seeds, and natural sweeteners. Perfect for a quick breakfast or snack, these cups are baked to golden perfection and can be topped with your favorite fruits and yogurt for a customizable, wholesome treat.

Ingredients

Wet Ingredients

  • 1/2 heaping cup creamy peanut butter
  • 1/4 cup applesauce
  • 2 Tbsp. maple syrup
  • 2 tsp. vanilla extract

Dry Ingredients

  • 2 cups old fashioned rolled oats
  • 1 Tbsp. chia seeds
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt

Toppings (Optional)

  • Strawberries
  • Blueberries
  • Mango
  • Raspberries
  • Greek yogurt
  • Ice cream
  • Bananas
  • Chocolate chips
  • Cacao nibs

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the oatmeal cups.
  2. Prepare the muffin tin: Line a 12-count muffin tin with silicone liners for easy removal, or grease the cups with non-stick spray or use paper muffin liners if silicone liners are unavailable.
  3. Mix ingredients: In a large bowl, combine creamy peanut butter, applesauce, maple syrup, vanilla extract, rolled oats, chia seeds, ground cinnamon, and salt. Stir thoroughly until the mixture is well combined.
  4. Fill muffin cups: Spoon about 2 heaping tablespoons of the oatmeal mixture into each muffin cavity. Use a spoon to press the mixture down firmly and up the sides to create a nest shape.
  5. Bake: Place the muffin tin in the oven and bake for 15-18 minutes, or until the edges turn a light golden brown.
  6. Cool: Allow the oatmeal cups to cool in the pan for 10 minutes, then carefully remove them and transfer to a wire rack to cool completely.
  7. Add toppings and serve: Fill each baked oatmeal cup with Greek yogurt and your choice of fresh fruits and optional toppings such as chocolate chips or cacao nibs before serving.

Notes

  • Using silicone liners makes removing the oatmeal cups from the muffin tin easier and prevents sticking.
  • If you prefer, replace peanut butter with any other nut or seed butter for a different flavor.
  • Feel free to customize toppings based on your preferences or seasonal fruit availability.
  • These baked oatmeal cups can be stored in an airtight container in the refrigerator for up to 5 days.
  • To reheat, warm in the microwave for about 20-30 seconds.
