Ingredients
Onion Rings
- 2 yellow onions
Batter
- 3/4 cup cassava flour (divided: 1/4 cup and 1/2 cup)
- 1 cup coconut milk
- 1 tbsp apple cider vinegar
Coating
- 2 4 oz bags of plantain chips
- 1 tsp garlic powder
- 1/4 tsp black pepper (omit for AIP)
Other
- 3 tbsp avocado oil
- Salt to taste
Instructions
- Preheat and Prepare Baking Sheets: Preheat your oven to 415°F and line two baking sheets or one large baking sheet with parchment paper lightly greased with avocado oil. Set aside for later.
- Prepare the Onions: Peel and wash the onions. Slice them into thick rings about 1/4 to 1/2 inch thick. Carefully separate the onion layers and set them aside on a plate.
- Set Out Dry Cassava Flour: Place 1/4 cup of cassava flour in a bowl for initial coating of the onion rings.
- Make the Batter: In another bowl, pour the coconut milk and apple cider vinegar. Whisk in 1/2 cup of cassava flour until a thick batter forms. Stir well and set this mixture aside.
- Crush the Plantain Chips: Using a food processor, process the plantain chips with the garlic powder and black pepper until they are finely crushed. Transfer to a small plate for coating.
- Coat the Onion Rings: Take one onion ring at a time and dip it first into the dry cassava flour, then into the prepared liquid batter thoroughly.
- Apply Plantain Chip Coating: Hold the coated onion ring over the plate of crushed plantain chips. Sprinkle and rotate the ring to evenly coat it with the plantain chips. Swirl the ring in any chips that have fallen onto the plate to ensure full coverage. Keep the plate dry for crispiness, wiping as needed.
- Place on Baking Sheet: Lay the completely coated onion ring on the prepared baking sheet. Repeat the entire coating process for all remaining rings.
- Add Avocado Oil: Drizzle the remaining avocado oil over the coated onion rings to help with baking and crispiness.
- Bake: Bake the onion rings in the preheated oven for 15-20 minutes, turning them carefully halfway through using tongs or a fork to ensure even browning.
- Cool and Serve: Remove the baked onion rings from the oven and allow them to cool slightly before serving. Serve with your favorite dipping sauce.
Notes
- For an AIP-friendly version, omit the black pepper in the plantain chip coating.
- Ensure the plantain chips are dry before crushing and coating for maximum crispiness.
- Use thick onion rings to prevent breakage and achieve a perfect crunch.
- Turning the onion rings halfway through baking helps them bake evenly and crisp up on all sides.
- Serve immediately after cooling slightly to enjoy the best texture.
