Description

These Baked Protein Pancake Bowls are a delicious and convenient meal prep option that requires no banana. Packed with protein and customizable toppings, they bake quickly in the oven and make for a nutritious breakfast or snack.

Ingredients

Main Ingredients

  • 1 egg
  • 50 g yogurt (vanilla or unflavoured)
  • 70 ml milk (soy, almond, or any milk of choice)
  • 35 g all-purpose flour
  • 25 g protein powder
  • 5 g zero calorie granulated sweetener (or sweetener of choice, approx. 1 tsp)
  • 1/2 tsp baking powder

Optional Toppings

  • Fresh fruit (e.g., berries, sliced bananas)
  • Sugar-free chocolate chips
  • Shredded carrots
  • Extra yogurt
  • Peanut butter
  • Maple syrup
  • Butter

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (356°F) to prepare for baking the pancake bowls.
  2. Mix Ingredients: In an oven-safe glass bowl, add the egg, yogurt, milk, flour, protein powder, sweetener, and baking powder. Mix all ingredients thoroughly until smooth.
  3. Prepare Multiple Bowls: If you are making several pancake bowls for meal prep, assemble each bowl individually with all ingredients to ensure even cooking.
  4. Add Toppings: Add your choice of toppings to the batter before baking—options include fresh fruit, sugar-free chocolate chips, or shredded carrots. You may also keep the bowls plain if preferred.
  5. Bake: Place the bowl(s) in the preheated oven and bake for 20-22 minutes, until cooked through and slightly golden on top.
  6. Cool: Remove the bowl(s) from the oven and allow to cool for 5-10 minutes to set.
  7. Serve: Enjoy your baked protein pancake bowls with additional toppings like extra yogurt, peanut butter, maple syrup, or butter as desired.
