Ingredients
Meatball Mixture
- 1 slice bread (whole wheat, white, or gluten free, crust removed)
- 2 cups baby spinach
- 1 tablespoon extra virgin olive oil
- 1 pound ground turkey
- 1 yellow onion, grated
- 3 garlic cloves, minced
- 4 ounces feta cheese, crumbled (about 1/2 cup)
- 1 egg, beaten
- 1/2 cup chopped fresh parsley
- 1 tablespoon dried mint
- Kosher salt, to taste
- Black pepper, to taste
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly oil a large sheet pan to prepare it for baking the meatballs.
- Soak the Bread: Toast the bread slice until it turns just brown. Place it in a bowl and cover with water, letting it soak for about 5 minutes until very tender. Drain and squeeze out all excess water from the bread, then crumble it into a large mixing bowl.
- Wilt the Spinach: Heat olive oil in a large skillet over medium heat. Add the baby spinach and cook briefly until wilted. Remove from the heat and allow it to cool slightly.
- Make the Meatball Mixture: In the bowl with the crumbled bread, add ground turkey, grated onion, minced garlic, crumbled feta, beaten egg, chopped parsley, dried mint, and the cooled wilted spinach. Season generously with kosher salt and black pepper. Mix thoroughly to combine all ingredients evenly.
- Form and Bake the Meatballs: Shape the mixture into golf ball-sized meatballs and place them evenly spaced on the prepared sheet pan. Bake in the preheated oven for about 30 minutes or until the meatballs are fully cooked through.
- Broil for Browning: Move the sheet pan to the top rack of the oven and turn on the broiler. Broil the meatballs for 1-2 minutes, watching closely, until the tops are nicely browned but not burnt.
- Serve: Remove the meatballs from the oven and serve hot. Enjoy them as a main dish with your favorite sides or as part of an appetizer spread.
Notes
- Be sure to squeeze out as much water as possible from the soaked bread to avoid overly soggy meatballs.
- The feta cheese adds great flavor and moisture; using full-fat feta is recommended for best taste.
- Adjust seasoning with salt and pepper according to your preference.
- These meatballs can be served with a side of tzatziki, a salad, or roasted vegetables for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
