Ingredients
Salmon Bites
- 2 lbs Salmon Filet
- 2 tbsp Mayonnaise
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Chili Powder
- 2 tsp Garlic Paste
- Garlic Salt and Black Pepper, to taste
Bang Bang Sauce
- 3/4 cup Mayonnaise
- 1/2 cup Thai Sweet Chili Sauce
- 1 tbsp Sriracha
- 1 tbsp Soy Sauce
- 1 tsp Honey
- 1 clove Garlic, grated or minced
Instructions
- Preheat Oven: Preheat your oven to 450°F (232°C) to prepare for roasting the salmon bites.
- Prepare Salmon: Pat the salmon dry and carefully remove the skin by slicing between the skin and flesh with a sharp knife, holding the skin taut. Trim any remaining skin bits.
- Cut Salmon: Chop the skinless salmon into 1 to 1.5 inch chunks and place them in a large mixing bowl.
- Make Seasoning Mixture: In a small bowl, combine 2 tablespoons mayonnaise, onion powder, garlic powder, chili powder, and garlic paste. Season the salmon with garlic salt and black pepper, then coat evenly with the mayo mixture.
- Arrange on Baking Sheet: Spread the seasoned salmon chunks in a single layer on a baking sheet, spacing each piece about 1-2 inches apart to ensure crispiness without overcrowding.
- Roast and Broil: Roast the salmon in the preheated oven for 10 minutes, then switch to broil for an additional 2-3 minutes until the bites are golden brown and crispy. Watch carefully to prevent burning.
- Prepare Bang Bang Sauce: While the salmon cooks, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, soy sauce, honey, and minced garlic until smooth and well combined.
- Serve: Once the salmon bites are cooked, drizzle the bang bang sauce generously over the top and serve immediately.
Notes
- Make sure salmon is completely thawed if using frozen before removing the skin.
- Space salmon pieces out on the baking sheet to help them crisp up nicely.
- Keep a close eye during broiling as it can burn quickly.
- The bang bang sauce can be adjusted for spiciness by varying the amount of Sriracha.
- This recipe works well as an appetizer or served alongside rice or a fresh salad for a light meal.
