Ingredients
Chicken and Sauce
- 3 tbsp vegetable oil
- 1 lb boneless skinless chicken breast, diced
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp red pepper flakes
- 1 tbsp brown sugar
- 3 tbsp Japanese BBQ sauce
Rice and Eggs
- 2 cups cooked rice
- 2 eggs
Toppings
- 1 tbsp sesame seeds (for topping)
- Chopped scallions (optional, for topping)
Instructions
- Cook the Chicken: Heat 2 tablespoons of vegetable oil in a medium-sized skillet over medium-high heat. Add the diced chicken, onion powder, garlic powder, red pepper flakes, and brown sugar. Stir to evenly coat the chicken and cook until fully cooked and browned, about 10 minutes. Remove the chicken from the pan and set aside.
- Cook the Eggs and Rice: Add the remaining 1 tablespoon of vegetable oil to the same skillet. Add the cooked rice, breaking up any clumps. Make a circle in the center of the rice and crack the eggs into it. Scramble the eggs instantly and cook until fully set.
- Combine and Finish: Stir the scrambled eggs into the rice, mixing thoroughly. Pour the Japanese BBQ sauce over the rice and stir until everything is evenly coated. Return the cooked chicken to the skillet to warm through. Remove from heat and top with sesame seeds. Optionally, garnish with chopped scallions before serving.
Notes
- Use day-old rice or chilled cooked rice for best texture and to prevent sogginess.
- Adjust the amount of red pepper flakes to your preferred spice level.
- Japanese BBQ sauce can be substituted with teriyaki or hoisin sauce if unavailable.
- For a low-carb option, try using cauliflower rice instead of cooked rice.
- Cook the chicken thoroughly to an internal temperature of 165°F (74°C) for safety.
