Description

Experience the rich, savory flavors of Beef Birria Queso Tacos served with a warm, aromatic consommé for dipping. These tacos combine tender shredded beef birria with melted Monterey Jack cheese inside crispy, golden tortillas, making them irresistibly delicious and perfect for a comforting meal.

Ingredients

Consommé:

  • 2 cups reserved sauce from beef birria recipe
  • 1 cup chicken broth
  • ¼ cup diced carrots
  • ¼ cup diced celery
  • ½ cup diced cabbage

Tacos:

  • 3 tablespoons reserved beef fat from beef birria recipe, or more as needed
  • 8 (5 inch) corn tortillas
  • 2 cups freshly grated Monterey Jack cheese
  • 2 cups shredded Beef Birria
  • 4 tablespoons chopped white onion, or to taste, divided
  • 4 tablespoons chopped fresh cilantro, or to taste, divided
  • 1 medium lime, cut into 4 wedges

Instructions

  1. Gather Ingredients: Collect all necessary ingredients for both consommé and tacos to prepare efficiently.
  2. Prepare the Consommé: In a saucepan over high heat, stir together beef birria sauce, chicken broth, diced carrots, celery, and cabbage. Bring the mixture to a simmer, then reduce heat to medium-low. Occasionally brush caramelized bits (fond) from the side with the hot liquid. Simmer until vegetables are tender and consommé thickens slightly, about 20 minutes. Keep warm on low heat.
  3. Heat the Beef Fat: In a large skillet over medium heat, melt the reserved beef fat. This will be used to toast the tortillas and impart flavor.
  4. Toast Tortillas: Place two corn tortillas in the skillet, flipping with a spatula until well coated with beef fat. Toast them briefly until golden brown.
  5. Assemble Tacos: Cover the toasted tortillas with freshly grated Monterey Jack cheese and then a portion of shredded beef birria. Drizzle about 1 tablespoon of consommé liquid over each taco, then sprinkle with some chopped white onion and cilantro.
  6. Cook Tacos Until Crispy: Fold each taco in half and gently press. Continue cooking in the skillet, flipping back and forth for 2 to 3 minutes until the tortillas are browned and crispy.
  7. Repeat for Remaining Tacos: Transfer cooked tacos to a plate and repeat the toasting, assembling, and cooking process for the remaining tortillas, adding more beef fat if needed.
  8. Serve with Consommé: Ladle consommé into a serving bowl, garnish with remaining white onion and cilantro, and squeeze lime wedges into the consommé. Serve hot alongside the crispy beef birria queso tacos.
  9. Enjoy: Dip your tacos into the flavorful consommé for an authentic and delectable experience.

Notes

  • You can use beef broth instead of chicken broth when making the consommé for a richer flavor.
  • Shred the beef birria finely to allow it to absorb more liquid, resulting in juicier tacos.
  • Reserve the beef fat when cooking birria as it adds essential flavor and helps achieve crispy tortillas.
  • This recipe requires a batch of beef birria, so prepare or source that ahead of time.
  • Adjust onion and cilantro quantities according to taste preferences.
