Description

This Blueberry Banana Bread is a moist, flavorful loaf perfect for breakfast or a healthy snack. Made with ripe bananas, fresh blueberries, and whole wheat flour, it's naturally sweetened and lightly spiced. The recipe uses simple ingredients and an easy mixing method, resulting in a wholesome homemade bread with tender crumb and burst of fruity goodness in every bite.

Ingredients

Fruits and Wet Ingredients

  • 1 cup blueberries
  • 3 ripe medium bananas, mashed
  • 2 tbsp unsweetened apple sauce
  • 2 large egg whites
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 1/4 cups white whole wheat flour (or Bob's Redmill All-Purpose Gluten-Free blend)
  • 3/4 tsp baking soda
  • 1/4 tsp salt

Other

  • 2 tbsp butter (or dairy-free ghee), softened
  • 1/2 cup (4 oz) light brown sugar, packed
  • Baking spray for greasing the pan

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly spray an 8 x 4 inch loaf pan with baking spray to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt to evenly distribute the leavening and seasoning. Set aside.
  3. Cream Butter and Sugar: In a large bowl, use an electric mixer to cream the softened butter and light brown sugar until the mixture becomes creamy and lightened in color.
  4. Add Wet Ingredients: To the creamed butter and sugar, add the egg whites, mashed bananas, unsweetened applesauce, and vanilla extract. Beat at medium speed until the mixture is thick and well combined. Scrape down the sides of the bowl to incorporate all ingredients evenly.
  5. Combine with Dry Ingredients: Gradually add the flour mixture to the wet ingredients and blend at low speed until just combined. Avoid over-mixing to keep the bread tender.
  6. Fold in Blueberries: Gently fold the blueberries into the batter using a spatula to evenly distribute without breaking them.
  7. Bake: Pour the batter into the prepared loaf pan and place it on the center rack of the oven. Bake for 50 to 55 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool: Remove the bread from the oven and allow it to cool in the pan for at least 20 minutes. For best slicing results, let the bread reach room temperature before slicing and serving.

Notes

  • Using ripe bananas enhances the sweetness and moisture of the bread.
  • You can substitute the blueberries with other berries or fruits if desired.
  • To make this recipe dairy-free, use a dairy-free ghee or plant-based butter alternative.
  • Be careful not to over-mix the batter once the flour is added to avoid a dense loaf.
  • Store leftover bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
