Description

These delightful Blueberry Cookies combine the tartness of blueberries with the sweetness of white chocolate chips, resulting in soft, fluffy cookies perfect for any occasion. With a short prep and baking time, these cookies offer a quick and delicious treat featuring fresh blueberry flavor and a tender crumb.

Ingredients

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon salt

Wet Ingredients

  • ½ cup frozen blueberries
  • ½ cup granulated sugar
  • 1 stick (½ cup) unsalted butter, softened
  • ¼ teaspoon vanilla extract

Additional Ingredients

  • ½ cup white chocolate chips (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set this mixture aside for later use.
  3. Prepare Blueberries: Place the frozen blueberries in a small microwave-safe bowl and heat them for about 1 minute until softened. Mash the blueberries with a fork until they form a jam-like consistency. If too warm, chill them briefly in the fridge to cool.
  4. Cream Butter and Sugar: Using a stand mixer fitted with a paddle attachment, beat the softened butter and granulated sugar together on medium-low speed until the mixture is light and fluffy, around 2 to 3 minutes.
  5. Add Blueberries and Vanilla: Add the cooled blueberry mash and vanilla extract to the creamed butter mixture. Increase the mixer speed to medium-high and beat until everything is well combined.
  6. Combine with Dry Ingredients: Slowly add the flour mixture to the wet ingredients, mixing just until no flour streaks remain. Be careful not to overmix. Gently fold in the white chocolate chips if using.
  7. Shape Cookies: Use a large spring-loaded cookie scoop (about 2 tablespoons per scoop) to drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Roll and lightly flatten the top of each cookie to ensure even baking.
  8. Bake: Bake the cookies in the preheated oven for 10 to 12 minutes, or until the edges are set and lightly golden brown.
  9. Cool: Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes. Then transfer them to a wire rack to cool completely before serving.

Notes

  • Using frozen blueberries helps to maintain their shape and flavor during baking.
  • Allow the blueberry mash to cool before adding to the batter to avoid melting the butter excessively.
  • White chocolate chips are optional but add a lovely sweetness that complements the berries.
  • For softer cookies, slightly underbake and allow to cool on the baking sheet.
  • Store cookies in an airtight container at room temperature for up to 3 days.
