Ingredients
Butter Mixture
- ¼ cup unsalted butter (½ stick, room temperature)
- ¼ teaspoon garlic powder
- ½ teaspoon dried parsley
Chicken Mixture
- 2 cups shredded cooked chicken
- ½ cup Buffalo sauce
- ⅓ cup crumbled blue cheese
Sandwich
- 4 slices sourdough bread (cut approximately ½-inch thick)
- 2 cups shredded Monterey Jack cheese (or Swiss or mozzarella)
Instructions
- Mix Butter Mixture: In a small bowl, combine the unsalted butter, garlic powder, and dried parsley until well blended. Set aside for spreading on the bread.
- Combine Chicken Mixture: In a medium bowl, mix the shredded cooked chicken, Buffalo sauce, and crumbled blue cheese thoroughly so that the chicken is evenly coated and the blue cheese is distributed.
- Prepare Bread: Spread one side of each slice of sourdough bread evenly with the prepared butter mixture. Then, flip each slice so the buttered side is down on your work surface.
- Assemble Sandwiches: On two of the non-buttered sides of the bread, layer ½ cup shredded Monterey Jack cheese each, followed by the Buffalo chicken mixture, then top with the remaining shredded cheese evenly.
- Close Sandwiches: Place the remaining two slices of bread on top, buttered side facing up, to close the sandwiches.
- Cook Sandwiches: Heat a large skillet over medium heat. Place the sandwiches in the skillet and cover with a lid. Cook for about 5 minutes, or until the bottom sides are lightly browned.
- Flip and Press: Carefully flip each sandwich over, gently press down to help seal the filling, then cover again and cook for an additional 3 to 5 minutes until the other side is golden brown and the cheese inside has melted.
- Serve: Remove the sandwiches from the skillet and serve immediately, optionally with blue cheese dip or extra hot sauce for added flavor.
Notes
- Use freshly shredded cooked chicken for the best texture; rotisserie chicken works great.
- You can substitute Monterey Jack cheese with Swiss or mozzarella based on preference.
- Adjust Buffalo sauce quantity to control the spiciness level.
- Make sure the skillet is preheated to medium to cook the sandwiches evenly without burning.
- Covering the skillet while cooking helps melt the cheese thoroughly and keeps the sandwich moist.
