Description

This Butter Cream Sauce recipe perfectly complements butternut squash ravioli, creating a rich and flavorful dish in just 15 minutes. The silky sauce, infused with shallots, fresh herbs like tarragon and thyme, and finished with Parmesan cheese, elevates the sweet and savory flavors of the ravioli for a comforting and elegant meal.

Ingredients

For the Ravioli

  • 1 (8 ounce) package butternut squash ravioli (frozen or refrigerated)

For the Butter Cream Sauce

  • 3 tablespoons butter
  • 1/4 cup shallot, sliced thinly
  • 1 sprig tarragon, leaves removed from stem
  • 2-3 sprigs thyme, leaves removed from stem
  • 1/4 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup Parmesan cheese, freshly grated

Instructions

  1. Cook the Ravioli: Prepare the butternut squash ravioli according to the package instructions, usually by boiling until tender. Once cooked, drain the ravioli thoroughly and set aside to keep warm.
  2. Prepare the Sauce Base: Heat a large skillet over medium heat and melt 3 tablespoons of butter, allowing it to foam gently without browning.
  3. Sauté Shallots and Herbs: Add the thinly sliced shallots to the melted butter and sauté for 1-2 minutes, stirring frequently, until they soften but do not brown. Then add the fresh tarragon and thyme leaves to release their aroma.
  4. Add Cream and Cheese: Reduce the heat to low and stir in the heavy cream along with freshly grated Parmesan cheese. Season the sauce with salt and pepper. Stir continuously until the cheese melts and the sauce thickens slightly.
  5. Combine Ravioli and Sauce: Add the drained ravioli to the skillet and gently toss with a spoon, ensuring every piece is well coated with the creamy butter sauce.
  6. Serve: Plate the sauced ravioli and optionally garnish with additional grated Parmesan cheese for an extra burst of flavor. Serve immediately.

Notes

  • Use fresh herbs for the best flavor, but dried herbs can be substituted if fresh are unavailable.
  • Be careful not to overcook the ravioli to maintain a tender texture.
  • For a lighter version, substitute half-and-half for heavy cream, though the sauce will be less rich.
  • Parmesan cheese should be freshly grated for optimal taste and melting quality.
  • Do not burn the shallots while sautéing, as it will impart bitterness to the sauce.
