Description

This Cajun Roast Beef Po Boy features tender, slow-cooked beef roast seasoned with bold Cajun spices, served on toasted hoagie buns with fresh lettuce, tomato, and pickles. The beef is cooked to perfection in a flavorful broth and Worcestershire sauce base, then shredded and mixed with a rich gravy for a hearty, comforting sandwich ideal for any meal.

Ingredients

Roast Beef:

  • 1 tablespoon oil
  • 1 (2-3 pound) beef roast (such as chuck, eye of round, etc.)
  • 1 tablespoon Cajun seasoning
  • 1 onion, sliced or diced
  • 1-2 cups beef broth (use 1 cup for slow cooker, 2 cups for stovetop/oven)
  • 1 tablespoon Worcestershire sauce (gluten-free if needed)
  • 1 tablespoon Cajun seasoning

Gravy Thickener:

  • 1 tablespoon cornstarch
  • 1 tablespoon water

Sandwich Assembly:

  • 6 (12 inch) hoagies/buns
  • 6 tablespoons mayonnaise
  • 2 cups lettuce, shredded
  • 2 large tomatoes, thinly sliced
  • 1/2 cup pickles, sliced

Instructions

  1. Brown the Beef: Heat the oil in a large oven-safe pan over medium-high heat. Season the beef roast with 1 tablespoon of Cajun seasoning, then sear it in the pan, browning all sides to lock in flavor.
  2. Add Aromatics and Liquids: Add sliced or diced onions to the pan, then pour in the beef broth, Worcestershire sauce, and remaining tablespoon of Cajun seasoning.
  3. Cook the Beef: Choose one cooking method: (1) On stovetop, bring to a boil, then reduce heat to low, cover and simmer for 2-4 hours until beef is tender and falls apart; or (2) Transfer the covered pan to a preheated oven at 275°F (140°C) and roast for 2-4 hours; or (3) Transfer all ingredients to a slow cooker and cook on LOW for 8-10 hours or HIGH for 4-6 hours until beef is very tender.
  4. Shred the Beef: Remove beef from liquid and shred it finely using two forks.
  5. Make Gravy: Bring the cooking liquids to a boil on the stovetop. Mix cornstarch and water to create a slurry, then slowly whisk it into the boiling broth. Reduce heat and simmer for 2-3 minutes until gravy thickens.
  6. Combine Beef and Gravy: Stir the shredded beef back into the thickened gravy to coat thoroughly.
  7. Assemble Po Boys: Slice hoagies lengthwise and spread mayonnaise on both sides. Layer with shredded lettuce, tomato slices, pickles, and generous portions of the Cajun roast beef mixture. Serve immediately and enjoy!

Notes

  • For slow cooker method, you can skip browning the beef and place all ingredients directly into the slow cooker.
  • Use 1 cup beef broth for slow cooker; 2 cups for stovetop or oven method.
  • Optionally add 1 tablespoon soy sauce to the slow cooker along with Worcestershire sauce for deeper flavor.
  • Add hot sauce to the assembled po boys for extra heat.
  • Ensure Worcestershire sauce is gluten-free if needed for dietary restrictions.
