Description

A quick and fresh Caprese Cottage Cheese Toast combining creamy low-fat cottage cheese, vibrant tomatoes, and flavorful pesto on toasted bread, topped with a homemade balsamic glaze and everything bagel seasoning for the perfect tangy and savory breakfast or snack.

Ingredients

Main Ingredients

  • 1 slice bread, toasted
  • 1 tablespoon pesto
  • 1/2 cup low-fat cottage cheese
  • 1/4 cup chopped tomatoes
  • 1 teaspoon everything bagel seasoning
  • 1 teaspoon balsamic vinegar glaze
  • Fresh basil for garnish (optional)

Balsamic Glaze

  • 1/4 cup balsamic vinegar

Instructions

  1. Prepare the Toast: Toast one slice of bread until golden and crisp. Spread 1 tablespoon of pesto evenly over the warm toast as the base layer.
  2. Add Cottage Cheese and Tomatoes: Spoon 1/2 cup of low-fat cottage cheese over the pesto layer and then evenly distribute 1/4 cup of chopped fresh tomatoes on top.
  3. Season and Garnish: Sprinkle 1 teaspoon of everything bagel seasoning over the assembled toast. Drizzle about 1 teaspoon of balsamic glaze over the top and add fresh basil leaves if desired for garnish. Serve immediately.
  4. Make the Balsamic Glaze: In a small saucepan, pour 1/4 cup balsamic vinegar and bring to a quick boil over medium-high heat. Reduce the heat and simmer gently for 2-3 minutes until slightly thickened. Remove from heat and allow to cool. Use 1 teaspoon for the toast and reserve or discard the rest. The reserved glaze can be reheated briefly in the microwave before reuse.

Notes

  • Balsamic glaze can be prepared ahead of time and stored in an airtight container for up to one week in the refrigerator.
  • Use low-fat or regular cottage cheese based on preference.
  • Everything bagel seasoning adds a savory crunch; substitute with sesame seeds and garlic powder if unavailable.
  • Fresh basil is optional but enhances the flavor and presentation.
  • This recipe is perfect for a quick breakfast or light snack, ready in under 10 minutes.
