Description

Cheeseburger Biscuit Bombs are irresistible appetizer bites featuring juicy, seasoned ground beef meatballs stuffed with melted cheddar cheese and wrapped in flaky biscuit dough. Baked to golden perfection, these savory treats combine the flavors of a cheeseburger in an easy-to-eat, handheld form perfect for parties and gatherings.

Ingredients

Meatballs

  • 1 lb ground beef
  • 1 whole egg
  • 3/4 cup Italian breadcrumbs
  • 2 tsp mustard
  • 2 tsp ketchup
  • 1 1/2 tsp garlic powder (divided)
  • 1 tsp onion powder
  • 1 tsp Worcestershire sauce
  • 1 block cheddar cheese, cut into 16 slices, then halved (32 pieces)

Biscuit Wrapping

  • 1 can Pillsbury Grand refrigerated biscuits
  • 1 egg white
  • 1 Tbsp water
  • 1 tsp dried parsley

Instructions

  1. Preheat and prepare baking sheet: Preheat oven to 350°F (175°C) and spray a large baking sheet with non-stick cooking spray to prevent sticking.
  2. Mix meatball ingredients: In a medium bowl, combine ground beef, 1 whole egg, Italian breadcrumbs, mustard, ketchup, 1 tsp garlic powder, onion powder, and Worcestershire sauce. Mix thoroughly until all ingredients are well blended.
  3. Prepare cheese slices: Cut the block of cheddar cheese into 16 equal slices and then halve each slice to yield 32 pieces of cheese.
  4. Form stuffed meatballs: Divide the meat mixture into 16 equal portions. Flatten each portion and place two pieces of cheese in the center. Carefully wrap the meat around the cheese, sealing fully, then roll into a smooth ball ensuring no cheese is exposed. Repeat for all portions.
  5. Bake the meatballs: Place stuffed meatballs on the prepared baking sheet and bake for 15 to 20 minutes until cooked through. Remove from oven and discard any cheese that has leaked onto the sheet. Allow meatballs to cool before proceeding.
  6. Preheat oven for biscuits: Reduce oven temperature. Set to 375°F if using a dark baking sheet, or 350°F if using a light nonstick baking sheet.
  7. Prepare biscuit dough: Separate the refrigerated biscuits and cut each biscuit into halves. Shape each half into a circle and flatten until wide enough to wrap around a meatball.
  8. Wrap meatballs in biscuits: Place a cooled stuffed meatball in the center of each biscuit circle. Fold dough up and around the meatball sealing the top by pinching lightly. Smooth out the dough, closing any gaps. Repeat for all meatballs.
  9. Prepare egg wash: In a small bowl, whisk together egg white, water, remaining 1/2 tsp garlic powder, and dried parsley until blended.
  10. Bake biscuit bombs: Arrange the wrapped meatballs on a non-stick sprayed baking sheet. Brush each with the prepared egg wash. Bake for 18 to 20 minutes or until biscuits are golden brown on top, taking care not to burn the bottoms.

Notes

  • Enjoy these biscuit bombs hot right out of the oven, but be cautious of hot melted cheese inside.
  • You can prepare the stuffed meatballs up to 2 days in advance; bake them and assemble the biscuit wrapping on the day of serving for best freshness.
  • Leftovers reheat well in the microwave for a quick snack.
