Description

This Cheesy Mashed Potatoes recipe combines the creamy textures of Russet and Yukon Gold potatoes with rich butter, cream cheese, and Colby/Jack cheese for a flavorful and comforting side dish. Infused with garlic and finished with fresh chives, this dish is perfect for any meal and serves six people.

Ingredients

Potatoes

  • 3 lbs Russet and Yukon Gold Potatoes

Dairy

  • 10 tablespoons butter, room temperature and cut into small cubes
  • 4 ounces cream cheese, room temperature and cut into small cubes
  • 1 cup freshly shredded Colby/Jack cheese
  • 1/2 cup milk

Seasonings

  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon pepper, plus more to taste

Garnish

  • 1 tablespoon freshly chopped chives

Instructions

  1. Prepare the Potatoes: Peel the Russet potatoes completely, but leave the skin on the Yukon Gold potatoes for added texture and flavor. Cut all potatoes into 2-inch slices or cubes to ensure even cooking. Place them into a large pot and cover with water by at least an inch.
  2. Boil the Potatoes: Bring the water to a boil over medium-high heat. Cook the potatoes for 15-20 minutes until they are very soft but not falling apart, checking tenderness with a fork.
  3. Drain and Mash: Drain the potatoes thoroughly and return them to the pot. Use a potato masher, ricer, or hand mixer to mash them until smooth and creamy.
  4. Add Cheese and Seasonings: Add the butter, cream cheese, shredded Colby/Jack cheese, milk, minced garlic, kosher salt, and pepper to the mashed potatoes. Mix everything thoroughly until fully combined and creamy.
  5. Serve and Garnish: Transfer the cheesy mashed potatoes into a serving dish. Garnish with freshly chopped chives for a touch of color and fresh flavor. Serve warm.

Notes

  • Leaving the skin on the Yukon Gold potatoes adds texture and nutrients.
  • For creamier potatoes, warm the milk before adding it.
  • Adjust salt and pepper to taste after mixing for best flavor balance.
  • Use fresh garlic for more pronounced flavor; roasted garlic can be substituted for a milder taste.
  • These mashed potatoes pair wonderfully with roasted meats and steamed vegetables.
