Description
This comforting Chicken and Biscuits Casserole combines tender cooked chicken, creamy soup, cheddar cheese, and vegetables with fluffy refrigerated biscuits, all baked to golden perfection for a hearty and easy family meal.
Ingredients
Soup Mixture
- 2 (10.5 ounce) cans cream of chicken soup
- 1 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon rotisserie seasoning
- 1/2 teaspoon black pepper
Main Ingredients
- 12 ounce can refrigerated biscuits (or two smaller 6 ounce cans)
- 1 cup frozen peas and carrots
- 1 cup shredded cheddar cheese
- 2 cups cooked chicken (shredded or diced)
Optional Garnish
- 1/4 cup sliced green onion
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with nonstick cooking spray to prevent sticking.
- Prepare Soup Mixture: In a large bowl, whisk together the cream of chicken soup, milk, garlic powder, rotisserie seasoning, and black pepper until well combined and mostly smooth, taking care to remove any lumps.
- Prep Biscuits: Open the refrigerated biscuit can(s) and separate each biscuit. Cut each biscuit into four pieces, then add them to the soup mixture bowl and gently stir to combine.
- Add Vegetables, Cheese, and Chicken: Incorporate the frozen peas and carrots, shredded cheddar cheese, and cooked chicken into the biscuit and soup mixture. Mix thoroughly to distribute all ingredients evenly.
- Transfer to Baking Dish: Pour the combined mixture into the prepared baking dish, spreading it out evenly.
- Bake the Casserole: Place the dish in the preheated oven and bake uncovered for 35 to 45 minutes. The biscuits will puff up and turn golden brown, and you should see bubbling liquid around the edges indicating it's cooking through.
- Check Doneness and Adjust: If you are unsure the middle is fully cooked, add additional baking time a few minutes at a time. If the top starts to brown too much before the biscuits are done, tent the dish with aluminum foil to prevent overbrowning while continuing to bake.
- Cool and Serve: Allow the casserole to cool for a few minutes once out of the oven. Top with sliced green onions if desired, then serve warm for a comforting meal.
Notes
- You can use shredded rotisserie chicken or leftover cooked chicken for convenience.
- Feel free to substitute frozen mixed vegetables if peas and carrots are unavailable.
- For a spicier twist, add a pinch of cayenne pepper or smoked paprika to the seasoning mix.
- Using refrigerated biscuits saves time compared to making dough from scratch.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
