Description

A comforting and hearty Chicken and Stuffing Casserole featuring tender chicken pieces baked in a creamy celery and chicken soup sauce, topped with moist Stove Top chicken stuffing, perfect for a family-friendly dinner.

Ingredients

Chicken

  • 2 pounds chicken tenderloins, cut into bite-sized pieces
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Sauce

  • 10.5 ounce can cream of celery soup
  • 10.5 ounce can cream of chicken soup
  • 1/4 cup milk

Topping

  • 6 ounce box Stove Top chicken stuffing mix
  • 1 1/2 cups chicken broth

Garnish

  • Fresh or dried parsley (optional)

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) and grease an 11x7-inch baking dish with cooking spray to prevent sticking.
  2. Prepare Chicken: Cut 2 pounds of chicken tenderloins into bite-sized pieces and place them evenly in the prepared baking dish.
  3. Season Chicken: Sprinkle 1/2 teaspoon kosher salt and 1/2 teaspoon black pepper over the chicken pieces, tossing lightly to coat.
  4. Make Sauce: In a small bowl, whisk together one 10.5-ounce can of cream of celery soup, one 10.5-ounce can of cream of chicken soup, and 1/4 cup milk until smooth and well combined.
  5. Pour Sauce Over Chicken: Evenly pour the creamy soup mixture over the chicken pieces and use a spatula to smooth the surface, ensuring all chicken is covered.
  6. Add Stuffing Mix: Sprinkle the entire 6-ounce box of Stove Top chicken stuffing mix evenly over the sauce-covered chicken.
  7. Moisten Stuffing: Pour 1 1/2 cups chicken broth evenly over the stuffing mix, making sure the stuffing is fully moistened.
  8. Bake Covered: Cover the baking dish tightly with foil and bake in the preheated oven for 40 to 45 minutes. The chicken is done when it reaches an internal temperature of 165°F (74°C).
  9. Brown the Top: Remove the foil and bake uncovered for an additional 5 minutes to lightly brown and crisp the top layer of stuffing.
  10. Garnish and Serve: Optionally sprinkle fresh or dried parsley on top before serving. Scoop some of the flavorful gravy from the bottom of the casserole and drizzle it over individual servings for extra taste.

Notes

  • Oven cooking times may vary; always check that chicken reaches an internal temperature of 165°F (74°C) to ensure it’s fully cooked.
  • For a richer flavor, use homemade chicken broth instead of store-bought if preferred.
  • Fresh parsley adds a nice touch of color and freshness but is optional.
  • This recipe can be made ahead and reheated; cover tightly to retain moisture.
