This recipe combines Italian flavors with wholesome ingredients, making it an ideal dish for family dinners or entertaining guests.

Ingredients

Meatballs

  • 2 lbs ground chicken
  • 1 large egg
  • 3/4 cup breadcrumbs (plain or Italian seasoned)
  • 1/2 cup ricotta cheese
  • 1 tsp garlic powder
  • 2 1/2 tsp Italian seasoning
  • 1 1/2 tsp sweet paprika
  • 1 medium onion (diced very finely)
  • 1 tsp sea salt
  • 1 tsp black pepper

Spinach Alfredo Sauce

  • 5 tbsp butter (unsalted)
  • 4 cloves garlic (minced)
  • 1 3/4 cups whole milk
  • 1 cup heavy cream
  • 1 egg yolk OR 1/4 cup all-purpose flour (for thickening)
  • 1/4 tsp freshly grated nutmeg
  • 1/3 cup parmesan cheese (or pecorino)
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper (plus more to taste and for serving if desired)
  • 2 cups spinach (finely chopped)

Instructions

  1. Prepare the Chicken Meatballs: Preheat your oven to 400°F (200°C). In a large bowl, combine ground chicken, egg, breadcrumbs, ricotta cheese, garlic powder, Italian seasoning, sweet paprika, minced onion, salt, and pepper. Knead thoroughly until well mixed.
  2. Taste Test and Season: Optional but recommended: fry a small spoonful of the raw mixture until golden, then taste and adjust the seasoning as needed, keeping in mind the saltiness of the sauce to come.
  3. Shape Meatballs: Form the mixture into golf-ball-sized meatballs and place them on a parchment-lined baking tray.
  4. Bake: Bake the meatballs for 25-30 minutes until golden brown and fully cooked, reaching an internal temperature of 165°F (74°C). While baking, prepare pasta if desired.
  5. Make the Spinach Alfredo Sauce – Melt Butter: In a large skillet over medium heat, melt the unsalted butter.
  6. Sauté Garlic: Add the minced garlic and sauté for about 1 minute, ensuring it does not brown.
  7. Thicken with Egg Yolk (Option 1): Pour in the whole milk and heavy cream, stirring occasionally. In a small bowl, whisk the egg yolk and temper it by gradually adding a few tablespoons of the hot milk mixture. Stir the tempered yolk back into the skillet and cook on low heat for 3-4 minutes until thickened.
  8. Thicken with Flour (Option 2): After sautéing garlic, whisk in 1/4 cup all-purpose flour and cook for 1-2 minutes to form a roux. Gradually whisk in the milk and cream until smooth and thickened.
  9. Cook Spinach: Add finely chopped spinach to the sauce and cook for 6-7 minutes until wilted and tender.
  10. Finish Sauce: Stir in Parmesan cheese, freshly grated nutmeg, sea salt, and black pepper. If the sauce is too thick, add more milk to reach desired consistency.
  11. Combine and Serve: Gently add the baked meatballs into the skillet with Alfredo sauce, stirring to coat evenly. Serve hot with pasta, rice, or bread.

Notes

  • For a richer sauce, use the egg yolk method for thickening; for a thicker, creamier texture, use the flour roux method.
  • Make sure not to overcook garlic to avoid bitterness in the sauce.
  • Testing the meatball mixture by frying a small portion before baking helps to balance seasoning perfectly.
  • Ensure meatballs reach an internal temperature of 165°F (74°C) for safe consumption.
  • Freshly grated nutmeg adds a subtle warmth that enhances the Alfredo sauce flavor.
  • Leftover sauce can be stored up to 3 days in the refrigerator and reheated gently to prevent breaking.
