Description

A quick and flavorful Chickpea Fried Egg recipe combining spicy chickpeas with a perfectly cooked egg, topped with feta cheese and fresh cilantro for a delicious and nutritious meal suitable for breakfast or brunch.

Ingredients

Chickpea Mixture

  • ⅓ cup cooked chickpeas
  • 1 tsp chili paste
  • 1 tbsp olive oil
  • ¼ tsp paprika
  • Salt and pepper, to taste

Egg and Toppings

  • 1 egg
  • 1 tbsp crumbled feta cheese
  • Fresh chopped cilantro, for serving

Instructions

  1. Heat the Pan: Heat a pan over medium heat and add 1 tablespoon of olive oil, ensuring it's evenly coated.
  2. Cook Chickpeas: Add the cooked chickpeas and chili paste to the pan, stirring occasionally and cooking for 2-3 minutes to blend the flavors and warm the chickpeas.
  3. Season and Shape: Stir in the paprika, season with salt and pepper, then press the chickpea mixture into a circle shape in the pan leaving a small hollow space in the center for the egg.
  4. Add the Egg: Crack an egg carefully into the center of the chickpea circle, making sure the yolk remains intact.
  5. Cook the Egg: Season the egg with additional salt and black pepper and cook for 3-5 minutes or until the egg white is fully set and the yolk reaches your desired doneness.
  6. Finish and Serve: Remove from heat, sprinkle crumbled feta cheese over the top, garnish with fresh chopped cilantro, and serve immediately.

Notes

  • Use fresh or canned cooked chickpeas to save time.
  • Adjust chili paste amount to control spiciness.
  • For a runnier yolk, cook egg for less time; for firm yolk, cook longer.
  • Feta cheese can be substituted with goat cheese or omitted for a dairy-free version.
  • Serve with toast or a side salad for a complete meal.
