Description

Delight in these charming Coconut Easter Nests, a festive and sweet treat perfect for celebrating the holiday. Made with shredded coconut, sweetened condensed milk, and a hint of vanilla, these golden nests are baked to perfection and filled with colorful mini egg-shaped candies for a playful and delicious dessert everyone will love.

Ingredients

Nest Ingredients

  • 14 oz flaked coconut (1 bag)
  • 14 oz sweetened condensed milk (1 can)
  • 1 large egg white
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Filling

  • Cadbury mini egg-shaped candies or similar candy, as needed

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix Ingredients: In a medium-sized bowl, thoroughly combine the flaked coconut, sweetened condensed milk, egg white, vanilla extract, and salt until the mixture is well blended and sticky.
  3. Form Mounds: Use about 1/4 cup of the coconut mixture to form mounds on the prepared baking sheet, spacing them evenly.
  4. Bake: Bake the coconut mounds in the preheated oven for 15-18 minutes, or until they turn golden brown. If the nests lose their shape during baking, gently reshape them with a cup by pressing and rotating around the edges.
  5. Create Indentations: Once out of the oven, and while still warm, make an indentation in the center of each baked nest using your thumb or a rounded measuring spoon to form the classic nest shape.
  6. Cool and Fill: Let the nests cool completely on a wire rack. After cooling, fill the center of each nest with Cadbury mini egg-shaped candies or similar egg-shaped sweets to complete the look.

Notes

  • Allow nests to cool completely before adding the candies to prevent melting or sticking.
  • If the nests flatten too much during baking, reshape them carefully while still warm.
  • For a different flavor, you can add a pinch of cinnamon or almond extract instead of vanilla.
  • Store nests in an airtight container to keep them fresh for up to 3 days.
  • Can be made a day ahead for convenience during Easter celebrations.
