Description

This creamy Cottage Cheese Alfredo is a quick and delicious pasta sauce made with blended cottage cheese, parmesan, and milk for a smooth and comforting meal. Ready in just 20 minutes, it combines the richness of traditional Alfredo with a lighter twist using cottage cheese, perfect for a satisfying weeknight dinner.

Ingredients

For the Sauce

  • 1 ½ cups whole milk cottage cheese
  • ½ cup finely grated parmesan cheese
  • ½ cup milk (2% recommended)
  • ¼ tsp salt (adjust to taste)
  • Freshly cracked black pepper (adjust to taste)

For the Pasta

  • 1 box (12-oz) pasta
  • 1 Tbsp butter
  • 2 cloves garlic (minced)

Instructions

  1. Blend the Sauce: Add the cottage cheese, parmesan, milk, salt, and freshly cracked black pepper into a blender. Blend until completely smooth and creamy, then set aside.
  2. Cook the Pasta: Bring a large pot of heavily salted water to a boil. Add the pasta and cook according to package instructions until al dente. Before draining, reserve ½ cup of the pasta cooking water for later use.
  3. Sauté the Garlic: Return the pot to the stove over medium-low heat. Melt the butter, then add the minced garlic and cook for about 1 minute or until fragrant, being careful not to burn the garlic.
  4. Heat the Sauce: Pour the blended cottage cheese sauce into the pot with the garlic butter. Gently warm the sauce until it’s steaming and just starting to bubble—avoid overheating to prevent separation or curdling.
  5. Combine Pasta and Sauce: Turn off the heat and stir in the cooked pasta. Gradually add small splashes of the reserved pasta water to achieve a creamy, silky sauce consistency. Taste and adjust seasoning with additional salt and pepper as needed.
  6. Serve: Serve immediately, topped with extra grated parmesan cheese and freshly cracked black pepper. Enjoy your creamy, comforting cottage cheese Alfredo pasta!

Notes

  • Be careful not to overheat the sauce to prevent curdling.
  • You can use any type of pasta you prefer; fettuccine or penne work especially well.
  • Adjust salt and pepper according to your taste preferences.
  • For a richer flavor, use whole milk instead of 2% milk if desired.
  • Reserve pasta water is key to get the perfect sauce consistency, so don’t skip it.
