Ingredients
Beans
- 2 (15.5-ounce) cans unseasoned black eyed peas or Great Northern Beans, drained and rinsed
Vegetables and Herbs
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1½ cups fresh or frozen corn kernels
- 12 ounces jicama, cut into ½-inch pieces
- ¾ cup finely chopped red onion
- 2 jalapeños, seeded and minced
- ⅓ cup minced fresh cilantro leaves
- 4 green onions, white and green parts, thinly sliced
Dressings and Seasonings
- ½ cup fresh orange juice (from 2 oranges)
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons vegetable oil
- 3 tablespoons seasoned rice wine vinegar
- ½ teaspoon sea salt
Serving
- Tortilla chips, for serving
Instructions
- Combine vegetables. In a large bowl, prepare all the fresh and chopped vegetables including jicama, bell peppers, corn, red onion, jalapeños, cilantro, and green onions.
- Add beans and dressing. Add the drained and rinsed black-eyed peas (or Great Northern beans) to the bowl along with the freshly squeezed orange juice, extra-virgin olive oil, vegetable oil, seasoned rice wine vinegar, and sea salt.
- Toss to combine. Gently mix all ingredients thoroughly to evenly coat the vegetables and beans with the citrus and vinegar dressing, ensuring all flavors meld together.
- Serve or chill. Serve the cowboy caviar immediately with tortilla chips on the side, or refrigerate for up to 1 hour to allow the flavors to meld before serving.
Notes
- Using fresh corn kernels provides a sweeter flavor, but frozen corn works well if fresh is unavailable.
- You can adjust the number of jalapeños according to your preferred spice level.
- Letting the salad rest refrigerated for an hour enhances the melding of flavors but is not mandatory.
- This recipe is naturally gluten-free and vegetarian-friendly.
