Description

This Creamy Avocado Salsa Verde is a vibrant, flavorful sauce combining roasted tomatillos, serrano pepper, fresh herbs, and creamy avocado to create a deliciously smooth salsa perfect for dipping or topping dishes. Roasting the vegetables enhances their flavor, while the avocado adds a rich, silky texture that balances the tangy and spicy notes.

Ingredients

Roasted Vegetables

  • 1 1/2 pounds tomatillos, husked
  • 1 serrano pepper (or jalapeño, adjust quantity for desired heat)

Fresh Ingredients

  • 1/2 cup yellow onion, diced
  • 1/2 cup cilantro, chopped
  • 1 clove garlic, minced
  • 1 teaspoon sea salt (more or less, to taste)
  • 1 tablespoon lime juice, fresh squeezed (more to taste)
  • 2 large avocados (or 3-4 small avocados)

Instructions

  1. Preheat the Oven: Set your oven to broil on high to prepare for roasting the tomatillos and pepper.
  2. Prepare and Roast Vegetables: Remove tomatillos from their husks and place them on a baking tray with the serrano pepper. Roast for about 5 minutes until the vegetables begin to char, then flip and roast for another 5 minutes to char evenly.
  3. Blend the Base Salsa: Transfer the roasted tomatillos and pepper to a food processor. Add diced onion, minced garlic, chopped cilantro, sea salt, and fresh lime juice. Process until the salsa reaches a slightly chunky but smooth texture, typical of green salsa.
  4. Adjust Seasoning: Taste the salsa and adjust salt and lime juice as needed. Test the heat level, keeping in mind that the pepper’s heat will intensify as the salsa cools.
  5. Chill the Salsa: Refrigerate the salsa to cool it down before adding the avocado or serving.
  6. Incorporate Avocado: When ready to serve, add one avocado to half of the chilled salsa in the food processor and blend until creamy. Store the other half of the salsa verde separately and repeat blending with avocado when ready to use.

Notes

  • You can substitute serrano pepper with jalapeño for milder heat or add more for extra spiciness.
  • The salsa can be made in batches; blend the avocado fresh when ready to serve for the best creamy texture and color.
  • Roasting the tomatillos and pepper gives a nice smoky flavor – don’t skip this step.
  • Store leftovers in an airtight container in the refrigerator and consume within 3-4 days for best freshness.
