Ingredients
Salad Ingredients
- 2 cans wild tuna (drained)
- 1/4 small red onion (finely diced)
- 3 celery stalks (diced)
- 3/4 cup cucumber (chopped)
- 2 tablespoons fresh parsley (finely chopped)
- 2 avocados (pitted)
Dressing Ingredients
- 2 tablespoons fresh lemon juice
- 2 1/2 tablespoons avocado or extra virgin olive oil
- Kosher salt (to taste)
- Black pepper (to taste)
Instructions
- Combine Ingredients: In a large salad or mixing bowl, add the drained wild tuna, finely diced red onion, diced celery, chopped cucumber, and chopped fresh parsley. Add the pitted avocados either mashed beforehand or added whole to be mashed while mixing, depending on your preferred texture.
- Add Dressing: Drizzle the mixture with fresh lemon juice and avocado or extra virgin olive oil to add creaminess and brightness. Season with kosher salt and black pepper to taste.
- Mix and Adjust: Thoroughly stir all ingredients to combine evenly. Taste the salad and adjust seasoning as needed with more salt, pepper, or lemon juice. Serve immediately or chilled for enhanced flavors.
Notes
- For best flavor and sustainability, use wild-caught tuna over canned varieties that are not labeled as wild.
- Fresh lemon juice brightens and balances the creaminess of the avocado; adjust quantity to your taste.
- Avocado oil is recommended for its mild flavor and health benefits, but extra virgin olive oil works well as an alternative.
- This salad is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 1 day without browning if lemon juice is used.
