Ingredients
For the Sauce and Ravioli
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1/2 cup chicken or vegetable broth
- 1 cup heavy/whipping cream
- 1 teaspoon lemon juice
- 1/4 cup sun-dried tomatoes
- 1 pound refrigerated cheese ravioli
- 1 cup packed fresh baby spinach
- Fresh basil, optional, to taste
- Salt and pepper, to taste
- Freshly grated parmesan cheese, optional, to taste
Instructions
- Heat the oils and garlic: In a skillet over medium-high heat, add 1 tablespoon olive oil and 1 tablespoon butter. Once melted, add the minced garlic and cook for 30 seconds until fragrant.
- Add liquids and ravioli: Pour in 1/2 cup chicken broth, 1 cup heavy cream, 1 teaspoon lemon juice, and 1/4 cup sun-dried tomatoes. Add 1 pound refrigerated cheese ravioli and stir to combine with the sauce ingredients.
- Simmer the ravioli: When the mixture begins to bubble, cover the skillet and reduce the heat to medium-low. Allow to cook for 5 minutes with the lid on, letting the ravioli cook through and the sauce thicken slightly.
- Check and adjust sauce thickness: Stir the ravioli gently. If the sauce remains too watery, cover the pan again and cook for an additional minute or two to thicken.
- Wilt the greens: Stir in 1 cup packed baby spinach and optional fresh basil. Cover and allow the greens to wilt for 1-2 minutes.
- Season and serve: Season with salt and pepper as desired. Sprinkle with freshly grated parmesan cheese if using and serve immediately for a creamy, flavorful meal.
Notes
- Use vegetable broth instead of chicken broth to make this dish vegetarian.
- You can substitute fresh ravioli or frozen ravioli, just adjust cooking times accordingly.
- Adding lemon juice helps balance the richness of the cream sauce.
- For extra flavor, try adding a pinch of red pepper flakes with the garlic.
- Leftovers can be refrigerated up to 2 days and gently reheated on the stovetop.
