Description

A quick and delicious recipe featuring crispy fried feta cheese and eggs served two ways with harissa or pesto on a warm tortilla. Perfect for a flavorful breakfast or light meal, combining creamy feta, spicy or herby sauce, and perfectly cooked eggs for a satisfying dish.

Ingredients

Main Ingredients

  • ¼ cup crumbled feta cheese
  • 1 tablespoon harissa (or pesto)
  • 1 large egg
  • 1 tablespoon fresh dill or basil, chopped
  • Avocado oil cooking spray
  • 1 small tortilla

Instructions

  1. Heat the skillet and melt feta: Heat a small skillet over medium heat. Add the crumbled feta cheese in a ring around the outside of the pan. Allow the cheese to melt and form a golden brown crust, about 2-3 minutes.
  2. Add harissa or pesto and egg: Place the harissa or pesto in the center of the pan inside the cheese ring. Gently crack the egg into the middle over the harissa or pesto. Cook the egg to your preferred doneness, approximately 3-5 minutes.
  3. Finish and remove: When the egg is cooked and the feta has developed a crispy crust, sprinkle fresh dill or basil over the top. Carefully use a spatula to remove the crispy feta and egg from the pan and transfer to a plate.
  4. Toast the tortilla: Spray the skillet lightly with avocado oil cooking spray. Add the tortilla and cook until lightly golden, about 1-2 minutes per side.
  5. Assemble and serve: Slide the crispy feta and egg mixture on top of the toasted tortilla. Serve warm for a delicious meal.

Notes

  • You can substitute harissa with pesto or your favorite sauce.
  • Use fresh herbs like dill or basil for garnish to add freshness.
  • Adjust egg cooking time to your preferred yolk consistency.
  • Spray the tortilla with oil for a crispier texture when toasting.
  • Serve immediately for best texture and flavor.
