Ingredients

Potatoes

  • 2 pounds petite Yukon gold potatoes, halved or quartered
  • 2 tablespoons olive oil
  • Kosher salt and pepper, to taste
  • Optional: garlic powder, to taste

Ground Turkey

  • 1 pound lean ground turkey (can sub beef)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • 1 teaspoon olive oil (optional, if needed)
  • Salt and pepper, to taste
  • Optional slurry (for saucier turkey): ½ cup cold water or beef/vegetable stock + 1½ tablespoons all-purpose flour, masa, or whole wheat flour

Toppings

  • Quick pickled onions
  • Shredded lettuce
  • Chopped tomatoes
  • Sliced jalapeños
  • Crushed tortilla chips
  • Fresh cilantro
  • Cheddar cheese (optional, for cheesy potatoes)
  • Lime wedges (for spritzing)

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for roasting the potatoes.
  2. Prepare Potatoes: Place the halved or quartered Yukon gold potatoes in a large bowl. Drizzle them with olive oil and toss until each piece is evenly coated. Season generously with kosher salt, black pepper, and optionally a little garlic powder for extra flavor.
  3. Roast Potatoes: Spread the potatoes in a single layer on a baking sheet. Roast for 25 minutes, then carefully flip and toss the potatoes to ensure even browning. Continue roasting for an additional 15 to 20 minutes until the potatoes are deeply golden and crispy. For cheesy potatoes, sprinkle shredded cheddar on top and return to the oven for 5 more minutes.
  4. Cook Ground Turkey: While potatoes roast, heat a skillet over medium-high heat. If needed, add a teaspoon of olive oil. Add the ground turkey and break it up with a wooden spoon or meat chopper. Stir and cook until the turkey starts to brown.
  5. Season Turkey: Add ground cumin, smoked paprika, garlic powder, chili powder, and a pinch of salt and pepper to the turkey. Stir well to combine and cook until the turkey is fully browned and seasoned. For a drier consistency, proceed to the next step. For saucier turkey, prepare the slurry.
  6. Make Slurry (Optional): In a shaker cup, combine ½ cup cold water or stock with 1½ tablespoons of all-purpose, masa, or whole wheat flour. Shake vigorously for at least 30 seconds until smooth.
  7. Add Slurry to Turkey (Optional): Reduce heat to low and slowly drizzle the slurry into the turkey while stirring constantly. Continue to cook on low for about 10 minutes, stirring frequently until the sauce thickens and coats the meat evenly.
  8. Assemble the Bowls: Layer the roasted potatoes on the bottom of your serving bowls. Add a generous portion of seasoned turkey and if desired, sprinkle additional cheese. Top with quick pickled onions, shredded lettuce, chopped tomatoes, sliced jalapeños, crushed tortilla chips, and fresh cilantro.
  9. Finish and Serve: Spritz everything with fresh lime juice for a bright, tangy finish. Serve immediately and enjoy your flavorful crispy potato taco bowls!

Notes

  • You can substitute ground beef for ground turkey if preferred.
  • Adding cheese on top of potatoes during the last minutes of roasting adds a delicious melty layer.
  • The slurry method is ideal if you prefer your turkey on the saucier side, else skip for a drier filling.
  • Quick pickled onions can be made ahead for added tang and brightness.
  • Adjust the level of jalapeños to control the heat of the bowl.
  • Use fresh lime wedges to add a fresh citrus spritz just before serving.
