Description

Tender and flavorful Crock Pot Short Ribs slow-cooked to perfection with aromatic herbs, garlic, and a rich beef broth, creating a comforting meal that's perfect served over creamy mashed potatoes.

Ingredients

Meat

  • 4 pounds beef short ribs

Seasonings & Spices

  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 2 bay leaves

Vegetables

  • 1 medium yellow onion, sliced
  • 3 teaspoons garlic, minced

Liquids & Sauces

  • 1 tablespoon olive oil
  • 3 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 2 teaspoons tomato paste

Thickening Agent

  • 3 tablespoons cornstarch

Instructions

  1. Season the Meat: Generously season the beef short ribs with salt and black pepper on all sides to enhance the flavor before cooking.
  2. Sear the Ribs: Heat a large skillet over medium-high heat and add one tablespoon of olive oil. Once the oil is hot, sear the short ribs for 1-2 minutes per side until they develop a rich brown crust, locking in juices.
  3. Prepare the Crock Pot: Place sliced onions at the bottom of your crock pot, then arrange the seared short ribs on top of the onions.
  4. Make the Sauce: In a bowl, combine minced garlic, dried rosemary, dried thyme, beef broth, Worcestershire sauce, yellow mustard, and tomato paste. Mix thoroughly and pour the mixture over the ribs in the crock pot.
  5. Add Bay Leaves and Cook: Lay the bay leaves on top of the meat, cover the crock pot, and cook on the low setting for 6-8 hours or until the ribs are fork-tender.
  6. Thicken the Gravy: Carefully remove the ribs from the crock pot. Mix ¼ cup of the cooking liquid with the cornstarch in a small bowl until smooth. Slowly whisk this mixture back into the crock pot. Return the ribs to the pot and cook for a few more minutes until the gravy has thickened to your liking.
  7. Serve and Enjoy: Serve the tender ribs and rich gravy over mashed potatoes or your favorite side, and enjoy your comforting meal.

Notes

  • For best flavor, sear the ribs well before slow cooking.
  • Cooking time may vary depending on your crock pot model.
  • Leftover shredded ribs can be used in sandwiches or tacos.
  • Adjust seasoning after cooking if necessary.
  • For a gluten-free version, ensure Worcestershire sauce is gluten-free and cornstarch is used as a thickener.
