Ingredients
Salmon Mixture
- 1 lb salmon, cubed
- 1 tbsp light soy sauce
- 1 tbsp Kewpie Mayo
- 1 tbsp Sriracha
- 1 tsp sesame oil
Sushi Rice
- 1 ½ cup uncooked sushi rice
- 1 tbsp rice vinegar
- 2 tsp white sugar
Assembly & Garnish
- 3 large nori sheets
- Furikake, for garnish
- 1 green onion, chopped, for garnish
- Cooking spray
Instructions
- Cook Sushi Rice: Prepare the sushi rice according to the package instructions until tender and fluffy.
- Season Rice: In a microwave-safe bowl, combine rice vinegar and white sugar. Microwave for about 30 seconds until sugar dissolves. Pour this mixture over the hot cooked rice and gently fold to mix well. Set aside.
- Preheat Oven: Set the oven to 400°F (204°C) to preheat while you prepare the salmon mixture and assemble the cups.
- Prepare Salmon Mixture: In a bowl, combine the cubed salmon, light soy sauce, Kewpie mayo, sriracha, and sesame oil. Mix thoroughly to incorporate all ingredients evenly. Set aside.
- Prepare Nori Sheets: Cut the nori sheets into 4 rectangles or squares sized to fit into a standard muffin tin.
- Assemble Sushi Cups: Lightly grease each muffin tin cavity with cooking spray. Place one nori square into each cavity, then add a spoonful of the seasoned sushi rice and gently press it to form a base. Top each rice base with a layer of the salmon mixture.
- Bake: Place the muffin tin in the preheated oven and bake at 400°F for 15 minutes or until the salmon is cooked through and slightly golden on top.
- Garnish and Serve: Remove the sushi cups from the oven and let cool for a few minutes. Drizzle additional sriracha or spicy mayo if desired. Sprinkle furikake and chopped green onions on top. Serve immediately and enjoy.
Notes
- Use sushi rice for authentic texture and flavor; rinsing the rice before cooking helps achieve perfect stickiness.
- Kewpie mayo adds a creamy, umami flavor typical of Japanese dishes.
- Adjust sriracha quantity to control spiciness according to your preference.
- Ensure the nori cups fit snugly in the muffin tin to hold the shape while baking.
- These sushi cups are best enjoyed fresh for optimal texture.
