Ingredients
Soup Base
- 1 tablespoon toasted sesame oil
- 4 garlic cloves, minced
- 2 tablespoons minced peeled fresh ginger
- 6 cups chicken stock
- 3 tablespoons low sodium soy sauce
- Sea salt, to taste
Vegetables and Garnishes
- 4 green onions, white and green parts thinly sliced, plus more for garnish
- 2 large carrots, peeled and julienned or 1 cup shredded carrots
- 3 cups fresh spinach
- 1 teaspoon sesame seeds (optional)
Dumplings
- 1 (1½ pound) bag frozen dumplings (potstickers or mini potstickers)
Instructions
- Heat oil, garlic, and ginger: In a large pot, heat the toasted sesame oil over medium heat. Add the minced garlic and fresh ginger, cooking and stirring often until fragrant, about 3 minutes.
- Add broth and vegetables, then simmer: Pour in the chicken stock, low sodium soy sauce, sliced green onions, and julienned carrots. Increase heat to high and bring the mixture to a boil. Once boiling, reduce heat to medium-low and simmer, stirring occasionally, for 5 minutes or until carrots are tender.
- Cook dumplings: Add the frozen dumplings to the pot and bring back to a boil over high heat. Cook the dumplings by stirring gently until they are heated through and cooked, about 4 minutes.
- Add spinach and season: Remove the pot from heat and stir in fresh spinach until wilted, about 4 minutes. Season the soup with sea salt to taste.
- Serve and garnish: Ladle the soup into bowls. Garnish with additional green onions and sesame seeds if desired. Serve warm and enjoy.
Notes
- Using low sodium soy sauce helps control salt levels in the soup.
- You can substitute vegetable broth to make the soup vegetarian, but adjust soy sauce to your taste.
- Frozen dumplings can be found in most grocery stores; mini potstickers work best for easy cooking and portion sizes.
- Feel free to add other leafy greens like bok choy or kale instead of spinach.
- The soup can be prepared ahead and gently reheated, though dumplings are best fresh.
