Description

These Easy Mexican Pizzas are a flavorful and fun twist on traditional pizza, using crispy fried flour tortillas as the base layered with seasoned ground beef, refried beans, taco sauce, and melty Colby Jack cheese. Perfect for a quick and satisfying meal, they come together in under an hour and serve six people.

Ingredients

Meat and Seasonings

  • 1 lb ground beef
  • 1 chopped onion
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried cilantro
  • 1/4 tsp cayenne pepper
  • 1 tablespoon minced garlic

Base and Toppings

  • 16 small fajita-size flour tortillas
  • 1 can refried beans (about 15 oz)
  • Taco sauce (about 1/2 cup or to taste)
  • 2 cups shredded Colby Jack cheese
  • Diced tomatoes (about 1/2 cup)
  • Chopped green onions (about 1/4 cup)

Other

  • Vegetable oil (for frying tortillas, about 1/4 cup)

Instructions

  1. Brown the beef and onions: In a large skillet over medium-high heat, cook 1 lb of ground beef with 1 chopped onion until the beef is fully cooked and brown. Drain excess grease from the skillet to keep the pizzas from becoming greasy.
  2. Season the beef: Add 1/2 tsp salt, 1/2 tsp pepper, 2 tsp chili powder, 1 tsp cumin, 1 tsp dried cilantro, 1/4 tsp cayenne pepper, and 1 tablespoon minced garlic to the cooked beef. Stir well to combine the spices evenly throughout the meat mixture.
  3. Fry the tortillas: In a separate skillet, heat enough vegetable oil over medium heat to cover the bottom. Fry each small fajita-size flour tortilla for 1-2 minutes on each side until golden brown and crispy. Drain tortillas on paper towels to remove excess oil.
  4. Assemble the pizzas: Heat the refried beans until warm and spread a layer on each fried tortilla. Add a scoop of the seasoned ground beef mixture over the beans, followed by a sprinkle of shredded Colby Jack cheese. Top with another fried tortilla. Spoon taco sauce over that top tortilla and add more shredded cheese on top.
  5. Bake the pizzas: Preheat your oven to 400°F (200°C). Place the assembled tortillas on a baking sheet and bake for about 10 minutes, or until the cheese is melted and bubbly.
  6. Add fresh toppings and serve: Remove the pizzas from the oven and top with diced tomatoes and chopped green onions. Serve immediately and enjoy your delicious Easy Mexican Pizzas!

Notes

  • Drain the grease from the cooked beef well to prevent soggy pizzas.
  • Adjust the amount of cayenne pepper depending on your preferred spice level.
  • Use vegetable oil or any neutral oil with a high smoke point for frying tortillas.
  • To save time, you can prepare the beef mixture ahead and refrigerate before assembling.
  • These pizzas are best enjoyed fresh out of the oven to enjoy the crispness of the tortillas.
