Description
These Easy Chocolate Coconut Date Energy Balls are a delicious and nutritious vegan snack made from medjool dates, shredded coconut, raw cacao powder, and hemp seeds. They offer a soft and chewy texture with a rich chocolate flavor, perfect for a quick energy boost or a healthy treat on the go.
Ingredients
Energy Balls:
- 20 large medjool dates, pitted
- 1 cup desiccated coconut (shredded, unsweetened)
- 1/4 cup raw cacao powder (or unsweetened cocoa powder)
- 1/2 cup hemp seeds
- 2 Tbsp water
Coating:
- Additional desiccated coconut for rolling
Instructions
- Prep: Line a baking sheet or plate with parchment paper. Place a few spoonfuls of desiccated coconut into a small bowl for rolling the balls. This coconut is separate from the 1 cup used inside the balls. Set aside.
- Blend Ingredients: Add the pitted dates, 1 cup desiccated coconut, raw cacao powder, hemp seeds, and water into a large food processor. Pulse until the mixture forms a paste-like texture. If it is not sticking together well, add a little more water, a splash at a time, until it holds.
- Shape Balls: Using a large spoon, scoop out portions of the mixture and roll them between your hands to form balls. Then roll each ball in the prepared bowl of desiccated coconut to coat the outside. Place the coated balls onto the parchment-lined baking sheet or plate. Expect the process to be a little messy.
- Repeat: Continue shaping and rolling until all the mixture is used. The recipe yields about 10-12 balls depending on their size.
- Freeze: Place the baking sheet or plate with the energy balls into the freezer for 2 hours to allow them to firm up.
- Serve and Store: Let the energy balls thaw for a few minutes before eating to achieve a soft, chewy texture. Store leftovers in the fridge or freezer for freshness.
Notes
- Use medjool dates for the best natural sweetness and texture.
- The energy balls can be stored in an airtight container in the refrigerator for up to one week or in the freezer for up to three months.
- Roll the balls generously in coconut for added texture and flavor.
- If the mixture is too dry, add water gradually to help it bind better.
- These energy balls are perfect for a quick vegan, gluten-free, and low-fat snack.
