Description

This delicious and nutritious egg wrap is a quick and easy meal perfect for breakfast or a light lunch. Made with whisked eggs, a hint of flour for structure, and filled with creamy avocado spread, fresh arugula, juicy tomatoes, and tangy feta cheese, this wrap combines vibrant flavors and wholesome ingredients in under 10 minutes.

Ingredients

Egg Wrap

  • 2 eggs
  • 1 teaspoon water
  • 1 teaspoon all-purpose flour
  • Salt and pepper to taste
  • 2 teaspoons olive oil

Avocado Spread and Filling

  • ½ avocado
  • 1 teaspoon lemon juice
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup arugula
  • 1 small tomato, sliced
  • 1 tablespoon feta cheese

Instructions

  1. Prepare the egg mixture: In a medium bowl, whisk together the eggs, water, all-purpose flour, salt, and pepper until the mixture is smooth and the flour is fully dissolved.
  2. Cook the egg wrap: Heat 2 teaspoons of olive oil in a nonstick frying pan over medium heat. Pour the egg mixture into the pan, spreading it evenly to form a thin layer.
  3. Set and flip the egg: Cook for about 3 minutes until the eggs are fully set, gently breaking any air bubbles with a spatula. Carefully slide a spatula under the edges, flip the egg wrap, cook briefly if needed, then slide it onto a plate to cool slightly.
  4. Make the avocado spread: In a small bowl, mash the avocado with lemon juice, garlic powder, salt, and pepper until creamy and well combined.
  5. Assemble the wrap: Spread the avocado mixture evenly over the cooked egg wrap. Top with arugula, sliced tomato, and feta cheese.
  6. Roll and serve: Roll the egg wrap tightly, slice in half, and serve immediately for the best flavor and texture.

Notes

  • Use a nonstick pan to prevent sticking while cooking the egg wrap.
  • Adjust salt and pepper in both the egg mixture and avocado spread to your taste preference.
  • You can substitute feta cheese with goat cheese or omit it for a dairy-free version.
  • For a heartier meal, add some cooked chicken or turkey slices inside the wrap.
  • The wrap is best enjoyed fresh but can be wrapped tightly and refrigerated for a few hours if needed.
