Description

This Feta Grilled Cheese sandwich combines the creamy tang of feta and mozzarella with the vibrant flavors of pesto and roasted red peppers, all nestled between crispy, buttery sourdough bread slices. A quick and delicious meal perfect for a cozy lunch or snack.

Ingredients

Bread & Butter

  • 4 slices of sourdough bread
  • 1-2 tbsp butter

Fillings

  • 2 tbsp pesto
  • 1 cup shredded mozzarella
  • 1 sliced roasted red pepper
  • 50g feta, crumbled
  • ½ tsp dried oregano

Instructions

  1. Butter the Bread: Spread butter on the outer sides of each slice of sourdough bread to ensure a golden, crispy crust when grilled.
  2. Apply Pesto and Cheese: Spread pesto evenly on the inside of each bread slice. Then add shredded mozzarella on one side of each sandwich for a melty texture.
  3. Add Toppings: Lay sliced roasted red pepper, crumbled feta, and sprinkle dried oregano over the mozzarella layer to add flavor complexity.
  4. Assemble the Sandwich: Close the sandwich by placing the other bread slice on top, pesto side facing in. Press down gently to compact the fillings.
  5. Heat the Pan: Warm a large pan over medium-high heat, allowing enough space to cook one or both sandwiches without crowding.
  6. Cook the Sandwiches: Place the sandwiches in the pan and cook for 4-5 minutes on each side. Use a spatula to press down gently as they cook, until the bread is golden brown and the cheese inside is melted.
  7. Serve: Slice each sandwich in half and serve immediately for the best flavor and texture. Enjoy your crispy, cheesy feta grilled sandwich!

Notes

  • For extra crispiness, use a cast iron skillet or a heavy-bottomed pan.
  • Adjust the amount of butter to your preference for richness and crunch.
  • Roasted red peppers can be substituted with fresh bell peppers if needed, though roasting adds sweetness.
  • To make it vegetarian, ensure the pesto does not contain animal rennet or anchovies.
  • Serve with a light salad or soup for a complete meal.
