Description
These Garlic Butter Roasted Carrots are a deliciously sweet and savory side dish featuring tender roasted carrots coated in a rich garlic butter sauce with a hint of honey and a spicy kick from Sriracha. Finished with fresh parsley, they make a perfect complement to any meal.
Ingredients
Carrots
- 2 lbs carrots, peeled and halved or quartered lengthwise
Sauce
- ⅓ cup butter
- 3 tablespoons honey
- 5 cloves garlic, minced
- 1 teaspoon Sriracha hot sauce
- ¾ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Garnish
- 3 tablespoons fresh parsley, minced
Instructions
- Preheat the oven: Preheat your oven to 425°F (220°C) and arrange the peeled and cut carrots evenly on a large sheet pan to prepare for roasting.
- Prepare the garlic butter sauce: In a small saucepan over medium heat, melt the butter. Then whisk in honey, minced garlic, Sriracha hot sauce, kosher salt, and freshly ground black pepper. Bring this mixture to a boil and cook for 1 minute to blend the flavors and slightly thicken the sauce.
- Coat and roast the carrots: Pour the hot buttery sauce over the carrots on the sheet pan and toss them thoroughly to ensure they are evenly coated. Place the pan in the preheated oven and roast the carrots for 15 to 20 minutes until they become fork-tender.
- Broil for charred edges: After roasting, switch the oven setting to broil. Broil the carrots for an additional 2 to 3 minutes to achieve lightly charred and caramelized edges, enhancing flavor and texture.
- Serve: Transfer the roasted carrots to a serving dish, drizzle with any remaining sauce from the pan, and sprinkle freshly minced parsley over the top just before serving for a fresh, herbaceous finish.
Notes
- For more spicy heat, increase the Sriracha amount or add chili flakes.
- Use fresh carrots for the best natural sweetness and texture.
- For a dairy-free version, substitute butter with olive oil or a vegan butter alternative.
- To save time, prepare the garlic butter sauce while the oven preheats.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated gently.
