Description

This Garlic Butter Steak with Parmesan Alfredo recipe combines tender, juicy steak bites with a rich and creamy homemade Alfredo sauce tossed with fettuccine. The steak is seasoned and seared to perfection in a skillet with garlic butter, while the Alfredo sauce is made from scratch using heavy cream, half and half, and freshly grated Parmesan cheese. A fragrant garlic butter base and fresh green onions finish this comforting, indulgent dish that's perfect for a flavorful weeknight dinner or special occasion.

Ingredients

Steak and Seasoning

  • 2 lbs steak (filet, ribeye, sirloin, etc.)
  • 2 tablespoons steak seasoning, divided (see notes for seasoning recipe)
  • 4-5 tablespoons avocado oil

Garlic Butter

  • 6 tablespoons butter, divided
  • 10 cloves garlic, minced and divided

Pasta and Sauce

  • 1 lb dry fettuccine noodles
  • 1.5 cups heavy cream
  • 3/4 cup half and half
  • 1/2 teaspoon freshly cracked black pepper
  • 2 green onions, diced (green and white parts)
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Prepare and Season the Steak: Cut the steak into 2-3 inch pieces. Rub the steak pieces with avocado oil and season liberally with steak seasoning, reserving 2 teaspoons of the seasoning for the Alfredo sauce later.
  2. Cook the Steak: Heat a large skillet over medium-high heat and add 3 tablespoons of avocado oil. Cook the steak pieces for a few minutes on each side, flipping only once, until desired doneness is reached (refer to notes for recommended steak temperatures).
  3. Make Garlic Butter and Infuse Steak: Remove the cooked steak from the skillet and set aside in a bowl. Lower the heat to low, add 2 tablespoons of butter and 1 tablespoon minced garlic to the skillet, cooking for about 1 minute until fragrant. Return the steak to the skillet and toss with the garlic butter. Then place the steak back in the bowl and cover loosely with tented foil to keep warm.
  4. Cook the Pasta: While the steak rests, bring a large pot of salted water to a boil. Cook the fettuccine noodles according to package instructions until al dente. Drain and set aside.
  5. Make the Alfredo Sauce: In the same skillet with the residual garlic butter, add 4 tablespoons butter and the remaining minced garlic. Sauté until fragrant, about 1 minute. Pour in the heavy cream, half and half, and add the reserved 2 teaspoons of steak seasoning. Simmer gently for 3 to 4 minutes, allowing the sauce to reduce slightly and thicken.
  6. Add Cheese and Finish Sauce: Stir in the freshly grated Parmesan cheese and whisk continuously until the sauce is smooth and thickened. Remove the skillet from heat and stir in the diced green onions. Taste and adjust seasoning if necessary.
  7. Toss Pasta with Sauce and Serve: Return the drained fettuccine to the skillet with the Alfredo sauce, tossing until the noodles are evenly coated. Plate the pasta and top with the garlic butter steak bites. Garnish with extra green onions and Parmesan cheese if desired. Serve immediately.

Notes

  • Steak seasoning can be made with a mix of salt, black pepper, garlic powder, onion powder, smoked paprika, and dried herbs.
  • For steak doneness: Rare: 120°F-125°F, Medium Rare: 130°F-135°F, Medium: 140°F-145°F, Medium Well: 150°F-155°F, Well Done: 160°F+
  • Avocado oil is recommended for searing due to its high smoke point; olive oil can be used but monitor heat carefully.
  • Use freshly grated Parmesan for the best flavor and to ensure smooth melting in the sauce.
  • This recipe serves 6 generously and pairs well with a green salad or steamed vegetables.
