Description

A simple and flavorful recipe for garlic roasted vegetables, featuring a colorful mix of red onion, bell pepper, broccoli, yellow and zucchini squash, all tossed in olive oil and garlic for a deliciously tender and aromatic side dish.

Ingredients

Vegetables

  • 1 red onion, roughly diced
  • 1 red bell pepper, roughly diced
  • 1/2 lb fresh broccoli, cut into small florets
  • 1 yellow squash, cut into 1/2 inch slices
  • 1 zucchini squash, cut into 1/2 inch slices

Seasonings & Oil

  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 425˚F (220˚C) to ensure it's hot enough to roast the vegetables perfectly.
  2. Prepare Vegetables: Chop all the vegetables into the sizes specified: dice the red onion and bell pepper, cut broccoli into small florets, and slice the yellow and zucchini squashes into 1/2 inch thick pieces. Place them all in a large mixing bowl.
  3. Season Vegetables: Drizzle the olive oil over the chopped vegetables. Then sprinkle the minced garlic, garlic powder, salt, and black pepper evenly over them. Toss thoroughly to coat all pieces with the oil and seasonings for an even flavor.
  4. Arrange on Baking Sheet: Spread the seasoned vegetables in a single layer on a large baking sheet to allow for even roasting and caramelization.
  5. Roast the Vegetables: Bake in the preheated oven for 15-20 minutes, stirring halfway through if desired, until the vegetables are tender and have slightly browned edges.
  6. Serve: Remove from the oven and serve the garlic roasted veggies warm as a flavorful and healthy side dish.

Notes

  • For extra caramelization, you can broil the vegetables for an additional 1-2 minutes at the end of roasting.
  • You can add other vegetables such as carrots or mushrooms depending on seasonality and preference.
  • Adjust seasoning to taste, especially salt and garlic, based on your dietary needs.
  • If you prefer a stronger garlic flavor, increase the amount of minced garlic or garlic powder.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
