Ingredients
Green Goddess Dressing
- ⅓ cup plain Greek yogurt
- 3 tablespoons mayonnaise
- 2 garlic cloves
- ⅓ cup baby arugula or spinach greens
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh basil
- 1 tablespoon snipped chives
- 1 tablespoon freshly squeezed lemon juice
- Pinch of crushed red pepper flakes
- Big pinch kosher salt and pepper
Slaw
- 1 small head green cabbage
- 2 large carrots, finely grated
- 1 red onion, thinly sliced
- ¼ to ⅓ cup green goddess dressing
Burgers
- 1 pound lean ground turkey
- Kosher salt and pepper
- 4 green onions, thinly sliced
- 2 garlic cloves, minced
- 1 large egg, lightly beaten
- ¼ cup seasoned breadcrumbs
- 1 tablespoon olive oil
- 4 to 6 buns, for serving
Instructions
- Make the Green Goddess Dressing: Add the Greek yogurt, mayonnaise, garlic cloves, baby arugula or spinach, fresh parsley, basil, chives, lemon juice, crushed red pepper flakes, kosher salt, and pepper to a food processor or blender. Blend until the dressing is smooth and well combined.
- Prepare the Slaw: In a large bowl, combine the chopped green cabbage, finely grated carrots, and thinly sliced red onion. Toss with ¼ to ⅓ cup of the prepared green goddess dressing until everything is well coated. Set the slaw aside to allow flavors to meld while you prepare the burgers.
- Prepare the Burgers: Season the ground turkey generously with kosher salt and pepper. Add the thinly sliced green onions, minced garlic, lightly beaten egg, and seasoned breadcrumbs. Mix gently with your hands or a spoon just until combined to avoid tough burgers.
- Form the Patties: Shape the turkey mixture into either four large patties or six smaller ones, depending on your preference for portion size. Be careful not to overwork the meat.
- Cook the Burgers: Heat the olive oil in a skillet over medium heat. Add the turkey patties and cook for about 5 minutes on each side, or until each side is deeply golden and the internal temperature reaches 160°F to ensure safety and juiciness.
- Assemble the Burgers: Spread a generous amount of green goddess dressing on the bottom halves of the buns. Place a cooked turkey burger on each bun, top with a scoop of the prepared slaw, then crown with the top bun. Serve immediately and enjoy the fresh, herbaceous flavors.
Notes
- Use a meat thermometer to check the burger's internal temperature for perfectly cooked turkey.
- For a lower-fat option, use low-fat mayonnaise and Greek yogurt.
- Make the green goddess dressing a day ahead to enhance the flavors.
- Toast the buns lightly for added texture and flavor.
- Feel free to swap arugula for spinach depending on your preference.
