Ingredients
Marinade Ingredients
- 3 tablespoons balsamic vinegar
- 3 tablespoons gluten-free tamari (substitute soy sauce if preferred)
- 2 tablespoons grapeseed oil (or preferred oil)
- 1 tablespoon vegan Worcestershire sauce (substitute vegan steak sauce)
- 1-2 teaspoons liquid smoke (or substitute with 1 teaspoon smoked paprika)
- 1 large garlic clove, minced or crushed
- 1/2 teaspoon granulated onion
- Salt and fresh cracked pepper to taste
Mushrooms
- 4 large portobello mushrooms, stems removed and dry brushed clean
Instructions
- Prepare the Marinade: In a large and shallow baking dish, whisk together the balsamic vinegar, gluten-free tamari, grapeseed oil, vegan Worcestershire sauce, liquid smoke, minced garlic, granulated onion, salt, and fresh cracked pepper. Taste the marinade and adjust the seasoning if needed, keeping in mind that the flavors will concentrate during marination.
- Marinate the Mushrooms: Add the cleaned portobello mushrooms to the dish, brushing the marinade liberally on all sides. Alternatively, spoon the marinade over the mushrooms. Allow them to sit for 10-20 minutes, flipping and brushing again halfway through to ensure even absorption of the flavors.
- Preheat the Cooking Surface: Heat a grill, grill pan, or skillet over medium-high heat. Once hot, brush the surface lightly with oil to prevent sticking.
- Grill the Mushrooms: Place the mushrooms on the heated pan or grill. They should sizzle immediately. Avoid moving them to ensure a good sear. Press gently with a spatula or tongs. Cook for 4-5 minutes on one side until browned.
- Flip and Cook the Other Side: Flip the mushrooms and sear the second side for another 4-5 minutes until tender and nicely browned. Add more oil or brush with extra marinade if needed during cooking.
- Serve and Enjoy: Remove the mushrooms from the heat and serve immediately as a main dish or as a flavorful addition to sandwiches, salads, or sides.
Notes
- Ensure mushrooms are dry brushed clean rather than washed with water to prevent sogginess.
- The marinade flavors will become more concentrated during marination, so adjust seasoning accordingly before marinating.
- Liquid smoke can be substituted with smoked paprika to add smoky flavor without overpowering the dish.
- Use gluten-free tamari for a gluten-free version of this recipe.
- Pressing the mushrooms gently while grilling helps them cook evenly and develop a nice sear.
