Ingredients
Meat and Vegetables
- 1 ½ pounds lean ground beef
- ½ cup diced onion
- 2 cloves garlic, minced
Seasonings and Liquids
- 3 tablespoons taco seasoning
- ½ cup water
- ½ cup instant white rice
- ½ cup chicken or beef broth
- 19 ounces red enchilada sauce
Canned Goods
- 15 ounce can black beans, drained and rinsed
- 15 ounce can pinto beans, drained and rinsed
Other
- 6 small flour tortillas, sliced into 1-inch strips
- 1 cup shredded cheddar jack cheese
Instructions
- Brown the Ground Beef: Add the ground beef to a large skillet and cook over medium heat for about 5 minutes until browned, breaking it apart as it cooks for even browning.
- Sauté Onion and Garlic: Add the diced onion and minced garlic to the skillet with the beef. Cook while stirring constantly for about 2 minutes until the onion softens and becomes translucent.
- Add Seasoning and Water: Stir in the taco seasoning and ½ cup water, then allow the mixture to simmer for 1-2 minutes, stirring regularly to blend the flavors.
- Cook Rice and Beans: Add the instant white rice, chicken or beef broth, red enchilada sauce, and drained black and pinto beans. Bring the mixture to a simmer, cover the skillet, and cook for 5 minutes or until the rice is tender and liquid absorbed.
- Incorporate Tortilla Strips: Stir in the sliced flour tortillas until evenly incorporated throughout the skillet mixture.
- Add Cheese Topping: Sprinkle the shredded cheddar jack cheese evenly over the top of the skillet contents.
- Melt the Cheese: Cover the skillet and let it sit for 2-3 minutes until the cheese has melted completely.
- Serve: Dish out the burrito skillet and serve hot, optionally topped with sour cream, guacamole, and fresh cilantro for added flavor.
Notes
- Using lean ground beef helps reduce excess grease while keeping the dish hearty.
- Instant white rice cooks quickly and blends well, but you can substitute with other quick-cooking rice varieties.
- Covering the skillet during the cheese melting step ensures even melting without additional heat.
- For a gluten-free version, substitute flour tortillas with corn tortillas or omit them altogether.
- Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
