A hearty and flavorful Ground Turkey Sweet Potato Skillet recipe that combines lean ground turkey, sweet potatoes, bell peppers, kale, and gouda cheese for a nutritious, one-pan meal perfect for a quick and satisfying dinner.
Ingredients
Protein
- 1 Pound ground turkey
Vegetables
- 2 sweet potatoes (peeled and diced)
- 2 bell peppers (diced)
- 3 cloves garlic (minced)
- 1 shallot (sliced)
- 2 cups kale (shredded)
Others
- 1 Tablespoon coconut oil
- 1 teaspoon salt
- ¼ teaspoon black peppercorns (cracked)
- 1 lime
- ½ cup gouda cheese (shredded)
Instructions
- Heat the skillet: Heat a large skillet over medium heat. Add coconut oil and swirl to coat the pan ensuring even cooking and preventing sticking.
- Brown the turkey: Add the ground turkey to the skillet. Season with a pinch of salt and cracked black pepper. Break apart the turkey and cook until it is browned and no longer pink, about 5 minutes.
- Add vegetables: Add the diced sweet potatoes, sliced shallots, minced garlic, and diced bell peppers to the skillet. Stir everything together to combine the flavors evenly.
- Add lime juice and cook: Juice the lime directly into the skillet. Cover the pan and allow the mixture to cook for 10 minutes, letting the sweet potatoes soften.
- Add kale and cheese: Remove the cover and stir the ingredients. Add the shredded kale and gouda cheese on top. Cook uncovered for an additional 10 minutes until the kale wilts and cheese melts. Serve hot.
Notes
- You can substitute gouda cheese with cheddar or mozzarella if preferred.
- For a spicier dish, add a pinch of crushed red pepper flakes when adding the vegetables.
- Use fresh lime juice for the best citrus flavor.
- Make sure the sweet potatoes are diced evenly to ensure they cook through during the covered cooking step.
- This dish reheats well and can be portioned for meal prep.
