Ingredients
Pasta and Sauce
- ½ lb Spaghetti
- ¼ cup Olive oil
- 2 tbsp Haitian Epis
- 1 Onion, chopped
- 1 Green Bell Pepper, diced
- 1 Red Bell Pepper, diced
- 2 Roma Tomatoes, diced
- 2 tbsp Tomato paste
- 3 small Maggi cubes
- 4 Hot Dogs, cut into rounds
- ⅛ tsp Ground cloves
- ⅓ cup reserved pasta water
- Salt to taste
Garnish
- 2 Hard boiled eggs
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add ½ lb of spaghetti and cook until al dente according to package instructions. Reserve about ⅓ cup of the pasta cooking water then drain the pasta.
- Prepare the Sauce Base: In a large saucepan, heat ¼ cup of olive oil over medium heat. Add 2 tablespoons of Haitian epis and fry until it becomes fragrant and takes on a golden color, about 2-3 minutes.
- Sauté Vegetables: Add the chopped onion, diced green and red bell peppers, and diced Roma tomatoes to the saucepan. Sauté for about 5 minutes or until the vegetables soften and blend together.
- Add Tomato Paste and Seasoning: Stir in 2 tablespoons of tomato paste and crumble in 3 small Maggi cubes. Then add the sliced hot dogs and ⅛ teaspoon of ground cloves. Mix well to combine all flavors.
- Simmer the Sauce: Pour in the reserved ⅓ cup pasta water and stir. Let the sauce simmer for 10-15 minutes over medium-low heat until it thickens to a sauce consistency. Adjust salt to taste.
- Combine Pasta and Sauce: Add the cooked spaghetti to the saucepan and toss well so the pasta is fully coated with the sauce. Cook for another 1-2 minutes while stirring.
- Serve: Plate the spaghetti and garnish each serving with half a hard boiled egg. Serve immediately and enjoy the rich Haitian flavors.
Notes
- You can substitute hot dogs with sliced sausage or ham if preferred.
- Haitian epis is a flavorful seasoning base made from blended herbs and spices; it can often be found in Caribbean grocery stores or online.
- Be sure to reserve some pasta water to loosen the sauce as it simmers for better consistency.
- Adjust the amount of salt depending on your taste and the saltiness of the Maggi cubes used.
- For a vegetarian version, omit the hot dogs and substitute vegetable broth cubes in place of Maggi cubes.
