Ingredients
Protein & Vegetables
- 1 lb ground beef
- 2 cups green beans
- 1 cup onion, diced
- 1 cup mushrooms
- 3 tsp minced garlic
Dairy & Broth
- 1/4 cup beef or chicken broth
- 1/3 cup sour cream
- 2 Tbsp cream cheese
- 2 cups Colby Jack cheese, shredded (reduce to 1 cup for less cheesy option)
Seasonings
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- 1/2 tsp Worcestershire sauce
- 1/8 tsp dried thyme
Instructions
- Brown the ground beef: In a cast-iron skillet over medium heat, cook the ground beef until browned, about 5 minutes. Remove the beef and drain excess grease, leaving 1 tablespoon in the skillet for sautéing vegetables.
- Sauté onions: Add the diced onions to the skillet and cook over medium heat until they begin to soften, approximately 3 minutes.
- Cook mushrooms: Add the mushrooms to the onions and continue cooking for an additional 2 minutes, allowing the mushrooms to soften.
- Add green beans, garlic, and broth: Stir in the green beans, minced garlic, and broth. Cook for 2 to 3 minutes until the green beans and other vegetables are tender.
- Add cream cheese and sour cream: Reduce heat to medium-low, then stir in the cream cheese until melted and well combined, followed by the sour cream for a creamy texture.
- Combine beef and season: Return the browned ground beef to the skillet. Add sea salt, black pepper, dried thyme, and Worcestershire sauce, stirring gently to combine all ingredients.
- Add cheese topping: Sprinkle the shredded Colby Jack cheese evenly over the top of the mixture in the skillet.
- Melt and brown the cheese: Place the skillet in the oven under the broiler for 2 minutes until the cheese is melted and browned. Alternatively, cover the skillet with a lid and cook on the stovetop for 3-4 minutes to melt the cheese, though it will not brown or crisp this way.
Notes
- For a less cheesy casserole, reduce the Colby Jack cheese to 1 cup.
- If you prefer a crispy cheese topping, use the broiler method in the oven.
- Leaving 1 tablespoon of beef grease in the pan enhances the flavor when sautéing vegetables.
- Broth choice (beef or chicken) can be adjusted based on preference or dietary needs.
- To keep the dish more low-fat, consider using low-fat sour cream and cream cheese alternatives.
