Description
Hasselback Potatoes are a classic Swedish side dish featuring thinly sliced, crispy-on-the-outside, tender-on-the-inside potatoes baked with buttery, savory seasoning. This recipe uses whole russet potatoes sliced carefully between skewers for perfect cuts without slicing through, then brushed with melted butter and seasoned before baking to golden perfection. The result is a visually impressive and deliciously flavored potato dish ideal for any meal.
Ingredients
Potatoes
- 4 large russet potatoes, washed and patted dry
Seasoning and Butter
- 4 tablespoons unsalted butter, melted (divided)
- 1 teaspoon kosher salt
- ½ teaspoon pepper
- Salt and pepper, to taste, for serving
Instructions
- Preheat Oven: Arrange a rack in the middle position of your oven and preheat it to 425°F (220°C). Prepare an unlined baking sheet and set it aside.
- Prepare the Potatoes: Place one potato between two chopsticks or skewers. This prevents your knife from cutting all the way through the potato.
- Slice the Potatoes: Make vertical slits about 1/8 inch apart by cutting straight down until your knife hits the skewers, leaving the bottom of each potato intact. Repeat this for all potatoes.
- Butter and Season: Place the sliced potatoes on the unlined baking sheet. Using a basting brush, coat about half of the melted butter all over the potatoes, making sure to get inside the slits. Season generously with kosher salt and pepper.
- Initial Bake: Bake the potatoes in the preheated oven for 30 minutes.
- Separate Layers and Butter Again: After 30 minutes, gently pull apart the layers of the potatoes with a knife to help crisp up the edges. Brush the remaining melted butter over the potatoes.
- Final Bake: Return the potatoes to the oven and bake for an additional 30 to 35 minutes, or until the potatoes are crispy on the outside and tender inside. Cooking time may vary depending on potato size.
- Serve: Remove from the oven and season with additional salt and pepper to taste. Serve warm as a delicious side dish.
Notes
- Using chopsticks or skewers prevents cutting all the way through, keeping the potato slices intact.
- Russet potatoes work best due to their starchy texture which crisps well in the oven.
- If you prefer, add garlic or herbs like rosemary with the butter for extra flavor.
- Ensure the potatoes are dried well before slicing to get a crispier texture.
- Adjust seasoning as desired; adding paprika or grated cheese after baking can enhance flavor.
