Ingredients
Blueberry Base
- 2 cups blueberries
- 2 Tablespoons lemon juice
- 1 cup granulated sugar
Dairy Mixture
- 1½ cups whole milk
- 2 cups heavy whipping cream
Instructions
- Cook the Blueberries: In a medium saucepan, combine 2 cups of blueberries, 2 tablespoons of lemon juice, and 1 cup of granulated sugar. Cook over medium heat, stirring frequently, until the sugar dissolves completely.
- Simmer the Mixture: Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 10 minutes, stirring occasionally. During this time, the mixture will thicken and intensify in flavor.
- Cool and Process: Remove the saucepan from heat and chill the blueberry mixture until it is completely cooled. Then, use a food processor, blender, or immersion blender to process the mixture until smooth and free of lumps.
- Combine with Dairy: Stir in 1½ cups of whole milk and 2 cups of heavy whipping cream into the pureed blueberry mixture, blending well to ensure a consistent texture.
- Churn the Ice Cream: Pour the combined mixture into your ice cream maker and churn according to the manufacturer’s directions, typically for about 20-30 minutes, until it reaches a soft-serve consistency.
- Freeze Until Firm: Transfer the churned ice cream into freezer-safe containers and freeze for at least 3 hours, or until it's firm enough to scoop.
Notes
- For extra blueberry flavor, stir in some fresh blueberries just before finishing the churn.
- If you don’t have an ice cream maker, pour the mixture into a shallow container and freeze, stirring every 30 minutes to break up ice crystals until firm.
- Use fresh or frozen blueberries depending on season availability.
- Make sure the blueberry mixture is completely cooled before adding the dairy to prevent curdling.
