Ingredients
Chicken
- 8 skinless, boneless chicken thighs
- 2 tbsp cornflour (cornstarch)
- 1/2 tsp salt
- 1/2 tsp pepper
Sauce & Cooking
- 2 tbsp vegetable oil
- 1 tbsp unsalted butter
- 4 cloves garlic, minced
- 110 g (1/3 cup) honey
- 80 ml (1/3 cup) chicken stock
- 1 tbsp rice vinegar
- 1 tbsp light soy sauce
- 1 tbsp finely chopped fresh parsley
- 1/2 tsp chili flakes
Serving
- Boiled rice, to serve
Instructions
- Coat Chicken: Place the chicken thighs in a bowl and add the cornflour, salt, and pepper. Toss the chicken thoroughly until each piece is fully coated with the cornflour mixture.
- Heat Oil: Heat the vegetable oil in a large frying pan or skillet over high heat until hot but not smoking.
- Cook Chicken: Add the chicken thighs to the pan in a single layer. Cook on one side for about 4-5 minutes until golden brown, then flip and cook for an additional 2 minutes on the other side.
- Add Butter and Garlic: Add the unsalted butter to the pan and allow it to melt. Stir in the minced garlic and reduce the heat to medium to prevent burning while infusing the flavors.
- Prepare Sauce: In a separate bowl, combine the honey, chicken stock, rice vinegar, and light soy sauce. Stir well to mix all ingredients evenly.
- Add Sauce & Simmer: Pour the honey garlic sauce into the pan with the chicken. Increase heat to bring the sauce to a boil, then reduce to a simmer and cook for 4-5 minutes until the sauce thickens and the chicken is cooked through with no pink inside.
- Garnish & Serve: Sprinkle chopped fresh parsley and chili flakes over the chicken. Serve hot over a bed of boiled rice.
Notes
- You can use chicken breasts instead of thighs, but cooking times may vary slightly.
- If you prefer less spice, reduce or omit the chili flakes.
- Use low sodium soy sauce to control salt content.
- Ensure the chicken is cooked thoroughly by cutting into the thickest part before serving.
- For a gluten-free version, substitute soy sauce with tamari.
