Description

This delightful Honey Lime Chicken & Avocado Rice Stack combines tender, honey-lime glazed chicken with fresh avocado and zesty cilantro-lime rice. Perfect for a quick and flavorful meal, the dish features layers of seasoned rice, creamy avocado slices, and juicy chicken glazed with a sweet and tangy sauce, making it as visually appealing as it is delicious.

Ingredients

Chicken and Glaze

  • 1 lb boneless skinless chicken breasts
  • ¼ cup honey
  • 2 tablespoons lime juice (fresh)
  • 1 teaspoon lime zest
  • 2 garlic cloves (minced)
  • Salt and pepper (to taste)
  • Oil (for cooking)

Rice and Garnish

  • 1 cup cooked rice (white or brown)
  • ¼ cup fresh coriander (chopped)
  • 1 tablespoon lime juice
  • Salt (to taste)

Avocado Layer

  • 2 ripe avocados (sliced)
  • 1 tablespoon lime juice
  • Salt and pepper (to taste)

Instructions

  1. Season Chicken: Season chicken breasts evenly on both sides with salt and pepper to enhance flavor.
  2. Prepare Glaze: In a small bowl, whisk together honey, lime juice, lime zest, and minced garlic until well combined to form a flavorful glaze.
  3. Cook Chicken: Heat oil in a large frying pan over medium-high heat. Add chicken breasts and cook for 6-7 minutes on each side until golden brown and fully cooked to an internal temperature of 71°C (165°F).
  4. Glaze Chicken: In the last 2 minutes of cooking, brush the honey lime glaze over the chicken, allowing it to caramelize slightly. Remove chicken from pan and let rest for 5 minutes before slicing.
  5. Prepare Rice Mixture: In a bowl, mix cooked rice with chopped coriander and 1 tablespoon lime juice. Season with salt and stir well to combine.
  6. Prepare Avocado: Slice ripe avocados and gently toss them with lime juice, salt, and pepper to prevent browning and add flavor.
  7. Assemble Stack - Rice Base: Place a ring mould or large cookie cutter on a serving plate. Press the rice mixture firmly into the bottom to create the base layer.
  8. Layer Avocado: Arrange sliced avocado over the rice layer inside the mould, slightly overlapping the pieces for presentation.
  9. Top with Chicken: Place the sliced honey lime chicken on top of the avocado layer, arranging slices attractively.
  10. Remove Mould: Carefully lift the ring mould or cookie cutter away to reveal a neat stack.
  11. Garnish and Serve: Drizzle any remaining honey lime glaze around the plate for added flavor and visual appeal. Repeat the assembly for remaining servings and serve immediately.

Notes

  • For best results, use fresh lime juice and zest to maximize the citrus flavor in the glaze and rice.
  • Ensure chicken reaches an internal temperature of 165°F (71°C) to guarantee it is safely cooked through.
  • Use ripe but firm avocados for easy slicing and good texture.
  • Warm the cooked rice slightly before mixing with lime juice and coriander for a better flavor blend.
  • If you don't have a ring mould, use a sturdy cookie cutter or small bowl to shape the stack.
