Description

Humpty Dumpty Dip is a creamy and flavorful appetizer inspired by deconstructed deviled eggs. Combining hard-boiled eggs with cream cheese, mayo, and a blend of spices, this dip offers a smooth and tangy taste perfect for parties and gatherings. Garnished with chives and optional pickles, it's served best with crackers, pretzels, or fresh veggies.

Ingredients

Eggs

  • 12 eggs, hard boiled and peeled

Dip Mixture

  • 1 (8 oz) package cream cheese, room temperature
  • 1/2 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 ½ tablespoons white vinegar
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • Pinch of black pepper
  • Pinch of cayenne pepper
  • 2 teaspoons chopped chives, divided

Garnish and Serving

  • Pickles for garnish, optional
  • Crackers or veggies for serving

Instructions

  1. Prepare Eggs: Place 6 of the hard boiled eggs into a large food processor. Cut the remaining 6 eggs in half and separate the yolks, adding the yolks to the food processor. Set the egg whites aside for later.
  2. Blend Mixture: Add the cream cheese, mayonnaise, yellow mustard, white vinegar, paprika, salt, black pepper, cayenne pepper, and half of the chopped chives to the food processor with the eggs. Process at high speed until the mixture is fully blended and smooth.
  3. Mix Egg Whites: Chop the reserved egg whites into small pieces and gently fold them into the blended egg mixture by hand, maintaining some texture in the dip.
  4. Assemble and Garnish: Transfer the dip to a serving bowl. Sprinkle the remaining chives and additional paprika on top. Garnish with pickles if desired.
  5. Serve: Serve the dip with crackers, pretzels, or fresh vegetable sticks for a delicious and crowd-pleasing appetizer.

Notes

  • Use room temperature cream cheese for easier blending.
  • Adjust the cayenne pepper amount for desired level of spiciness.
  • Pickles are optional but add a nice tangy contrast.
  • Best served chilled but allow it to sit at room temperature for 10 minutes before serving for optimal flavor.
  • The dip can be stored covered in the refrigerator for up to 3 days.
