Ingredients
Crust
- 15 honey flavored graham crackers
- 8 tablespoons (1 stick) salted butter, melted
- ½ cup sugar
Filling
- 6 large egg yolks
- 2 (14-ounce) cans sweetened condensed milk
- 2 tablespoons finely grated lime zest, plus more for garnish
- 1 cup fresh or bottled key lime juice (from about 16-20 key limes)
Topping
- 1 cup whipped cream, for serving
Instructions
- Preheat Oven: Preheat the oven to 325°F with a rack in the center position to ensure even baking of the crust and filling.
- Prepare the Crust: Pulse the honey flavored graham crackers in a food processor until fine crumbs form, about 20 pulses. Add melted butter and sugar, then pulse another 10 times until combined. Pour the crumb mixture into a 9-inch deep dish pie pan, pressing firmly with the back of a measuring spoon to create an even layer on the bottom and slightly up the sides.
- Bake the Crust: Bake the crust in the preheated oven for 15 minutes. Remove and allow it to cool completely to set before adding the filling.
- Make the Filling: In the bowl of a stand mixer, beat the egg yolks and sweetened condensed milk together until the mixture is thickened and nearly doubled in volume, about 3 to 4 minutes. Gently fold in the finely grated lime zest and fresh or bottled key lime juice.
- Bake the Pie: Pour the lime filling into the cooled prepared crust. Bake for 15 minutes at 325°F until the filling is set but still slightly jiggly.
- Chill: Transfer the pie to the refrigerator and chill for 3 to 4 hours to fully set and develop flavor.
- Serve: Top the chilled pie with whipped cream and garnish with additional lime zest. Serve chilled for a delicious and refreshing dessert.
Notes
- Use fresh key lime juice if possible for the best authentic flavor, but bottled juice can be a convenient substitute.
- Make sure the crust cools completely before adding the filling to prevent it from becoming soggy.
- Whipped cream topping is optional but adds a nice creamy contrast to the tart filling.
- The pie can be made a day ahead and refrigerated to enhance flavors.
